Broiled red snapper
The other dish on our boodle fight was butterflied red snapper seasoned with pescado and liquid seasoning, then broiled in the oven for about 8 minutes. Broiling is easier and way faster, but this dish would taste way better when grilled outdoor, but who likes to grill outdoor when the weather is in the three digits, right?
Chicken with artichoke hearts and olives
Another simple and healthy dinner recipe that is perfect on a busy weeknight. The arsenal: chicken thighs cut into bite-size pieces and sauteed in garlic and onion, about 2 cups of artichoke hearts, a can of black olives, any crumbled cheese, lemon from the garden, thinly sliced red onion and then garnished with oregano, also from the garden.
Burrata with tomatoes and basil
A "no cook" dinner which is perfect this mid summer when the barometer is through the roof. This is burrata with different varieties of tomatoes from the backyard edible garden - Noire de Crimee, Lemon Blush and Yellow Pear. Then garnished with basil, also from the garden.

Tomato and mint salad from the backyard garden
Love to grow different varieties of tomatoes in different colors, shapes, sizes and flavor profile. There are 23 varieties currently growing in our backyard edible garden. Some of them are on this salad - Aunt Ruby's German Green, Cherokee Carbon, Sungella, Lemon Blush and Lemon Cherry. Homegrown tomatoes taste so GOOD!
Making a simple potato salad
Steamed petite red potatoes sliced in half, drizzled with two tablespoon melted butter, and then garnished with freshly-picked chives from the backyard edible garden. A sprinkle of coarse sea salt and freshly-cracked peppercorns. That was the side dish for our steak dinner last night.
Rib-eye steak
Last night's dinner was rib-eye steak garnished with rosemary from the backyard edible garden. The side dishes were potato salad, tomato salad, grapes and watermelon. This video covers the steak part, the potato salad and tomato salad will be on the next videos.
Seafood soup
A perfect winter dish, but seafood is also great during summer. Here's seafood soup with little neck clams, Alaskan cod, shrimp and scallops in tomato and clam juice with diced tomatoes seasoned with pepper flakes, salt, freshly cracked peppercorns, bouquet garni and lemon verbena. Then served with sourdough bread.
A colorful salad from the backyard garden
A garden to table recipe. Different varieties of tomatoes (lemon blush, taxi, sungella and Siberian red turned into a colorful salad with Persian cucumber and strawberry. The salad dressing was homemade with olive oil, juice of half a lemon, honey and salt.
