Beef and pasta soup "Sopa Criolla"
A very flavorful Peruvian soup, Sopa Criolla is made of ground beef or minced beef sauteed in chopped onion and diced garlic, 5 cups of water, angel hair pasta seasoned with dried oregano and beef seasoning, then topped with sunny side egg garnished with fresh oregano. The special ingredient is Ají Panca, a variety of red pepper grown in Peru.
A simple and colorful dinner
Dinner was simple and easy to prepare and also colorful. It has thinly sliced garlic, chopped onion, chicken cut into bite size pieces, carrots, green beans, celery, broccoli, water chestnuts, young corn, two varieties of mushroom and quail eggs. Plus two cups of chicken broth and corn starch to thicken the sauce.
Casarecce pasta with garden tomatoes and basil
Some freshly-picked tomatoes and basil from the backyard edible garden, store-bought casarecce pasta, leftover shrimp and bacon from our raclette dinner the other night, tossed together with olive oil and a dash of salt into a simple, delicious and easy to prepare weeknight dinner.
