They are absolutely one of my favorite veggies and no matter how you make them they are always delicious. My all time favorite way to cook potatoes is to roast them in the oven. They have the perfect crispy edges with the soft, fluffy and tender interior. I like to roast my potatoes with fresh minced garlic, Italian seasoning and freshly grated Parmesan cheese. I intentionally like to make extra so I have left overs. You would not believe how delicious these are thrown in your cast iron for the next days breakfast home fries.
