I love eggplant and this is one of my favorite recipes to prepare. I just broiled three eggplants, peeled off the skin and then topped them with tomatoes, coarsely chopped salted eggs, a sprinkle of salt, a drizzle of cane vinegar and torn basil. Easy peasy!
