Southern Cajun Turkey
How to smoke a Cajun Turkey By Cajun Rnewbbq. First what I did was spatchcocked the turkey. That's where you take out the backbone of the bird and lay it flat. It promotes even cooking and faster cooking. Then we took the Tony Chachere's creole butter and injected every part of the bird in multiple places thruout the bird. You want it well seasoned. Then take some spray butter and spray the bird before you put the seasoning on it. Once done put your seasoning on the bird in layers. First Tony's then Meat Church Holy Voodoo. Next get your smoker up to temp. Today I'm using an offset grill, with pecan wood. I got the grill up to 350 degrees. Some might say that's to high of temp, but trust me it's just right. Now let it go. Spray the bird with spray butter every 30 minutes to crisp up the skin. It will be done when the bird is 165 degrees in the breast and 175 degrees in the legs and thighs.

CheeseBurger Meatloaf- Flavorful! By Cajun Rnewbbq Start off With 2 Lbs. of ground meat and add to it a couple of Tbs of Horseradish, 1 cup of breadcrumbs, half of a bell pepper and half of an onion diced, 2 eggs, Cajun seasoning, 1 Tbs. of mustard powder, 1/4 cup of milk, and a couple of strips of bacon chopped up. Mix that all together and start layering that into your meatloaf pan. Alternate a layer of meat with a layer of shredded cheese. When you get to the top put a layer of bacon. Get your oven or grill up to 400 degrees and put it on for 45 minutes. Put you ketchup on top when you put it on the smoker. Once its all done, let it rest for 10 to 15 minutes before slicing into it or else it will crumble apart.
Six Gun Chili. Texas Chili
Six Gun Chili By Cajun Rnewbbq First you start off with putting the 2 packets of seasoning mix into 1 cup of water. Stir that up and put it to the side. Next go ahead and brown off 2 lbs. of ground meat. Transfer that to a Dutch oven. Now pour in 1 can of diced tomatoes, the 1 cup of seasoning mix, and the packet of the six-gun seasoning mix. How much you put in of this will determine how hot the chili gets. Next if you want a thicker chili you can take the last packet and pour that into the chili and stir that up. They recommend 30 minutes, but I always do a min. of 2 hours before I call my chili done.

Pig Shots - This One is Beyond Spicy! By Cajun Rnewbbq Start off by cutting up your Jalapenos. First cut up some into rounds, then dice up some for the cheese mix. Next make up your cheese mix. Take the diced jalapenos, 1 block of softened cream cheese, 1/4 of a bag of shredded cheese, and today i used Saints and Sinners Butt Dust ( their pork rub) and Sweet Heat. Mix that all together and put it into a gallon bag and snip a corner off. Next cut some smoked sausage into 1" rounds. Then cut a pack of bacon in half. Now take 1 strip of bacon, 1 round of sausage and a toothpick and wrap the bacon around the sausage. Once done, take a jalapeno round and insert it and put it ontop of the sausage. Now take the cheese mix and put a little bit into the center. After that Take some Sweet Heat and sprikle it ontop and then put another round ontop. Then get your grill up to 350 degrees and put them in for 40 minutes. At that time put on some bbq sauce and let go for 5 min, before pulling off.

Santa Maria Bbq - Skirt Steak Tacos on the Menu By Cajun Rnewbbq First go ahead and put your skirt steak in a bag with the Tapatio marinade. They said for 30 minutes, but I let it go for 2 hours. I wanted it to be well seasoned. While that's in the fridge, chop up your veggies. I did red onion and green bell pepper. You of course can do more or less or different. Thats the beauty of this. Next get you grill fired up with the santa maria attachment. Today I'm using oak wood. After the meat is done marinating, and the grill is up to temp, go ahead and put the meat and veggies on the grill. Adjust the height of the grate as the fire goes higher or lower. Pull the meat and veggies at your desired doneness.

Sweet Fire Wings By Cajun Rnewbbq First you want to take some Fire Chile Oil and mix in some pineapple juice. I say 2/3 oil to 1/3 juice. Then inject it into each wing. Then take the wings and put them into a bag and put the extra liquid into it with several tablespoons of Kosmos Dirty Bird. Put it into the Fridge for several hours to marinate. When its time get your grill up to 350 degrees. Take the wings out of the bag, and sprinkle on some more Dirty Bird. Place the wings on the grill. I used the Weber and the Vortex so i put mine in a circle around the vortex thats in the center holding the charcoal. Every 15 minutes flip the wings and rotate the lid a quarter of a turn, At 1 hour the wings should be done. You're looking for a temp of 175.

Jess Pryles J.K.F. Method by Cajun Rnewbbq The J.K.F. Method stands for Just Keep Flipping. You put you steak on a really hot grill and flip it every 30 seconds. Today we used her Hardcore Carnivore Black Rub. This rub is designed for beef. We didn't use a binder and layed the rub on thick and let it sweat in while we got the grill set up and up to temp. Once up to temp, go ahead and start. Put the steak on and time it. Every 30 seconds filp it till it gets to the desired temp you want. I went with med. rare.
Chicken Tostadas By Cajun Rnewbbq First get yourself some chicken breast and spray some spray butter. Then put on some Kosmos Q Dirty Bird and Suckle Buster Clucker Dust. Get your smoker up to 350 degrees and put that chicken on. Spay them down every 20 minutes with spray butter. It helps brown the chicken and keeps it moist. During this time get a can of refired beans out and warm them up and get an avocado out and get that meat out and smash it up. Once the chicken hits 165, pull it off and shred it up. Now its time to build the Tostadas. Put down a tostada shell, lay own some refired beans, then chicken, lettuce, tomatos, avocado, and cheese.
Chili Dog Cheeseburger
Chili Dog Cheeseburger By Cajun Rnewbbq Today we combined 2 favorites a Chili Dog and a Cheeseburger into 1. First make your Chili. Brown off 2 lbs of ground meat. Then add in 1 can of rotel, Tabasco Chili starter bottle, and your favorite Chili seasoning mix. Then I put it on my smoker at 300 degrees for at least 2 to 3 hours to let it thicken up. I like a thick chili. you prefer a thinner chili go less time. After the chili is done. Time to get you hamburger and hotdogs on the grill. Season them up with you favorite seasoning and cook them to your desired temp. When close to done put cheese on the burgers and let cook a minute. After they are done, time to split the hot dog down the middle. Dress the hamburger how you like on the bun. Place the split hot dog ontop of the hamburger and then put the chili onto of that. Then all done.
Philly Cheesesteak by Cajun Rnewbbq First get yourself some hoagie rolls, yellow onions, mozzarella/ provolone cheese (you can use cheese wiz or American cheese) some ribeye steak shaved thin and some Redneck Chef Baudoux Pitmaster Choice seasoning. Cut the onion into slivers. Heat your griddle to med. low / med. Begin by carnalizing the onions. Once that is done, put the steak on and grill that up to the desired doneness you want. (rare, med rare. etc.) Once it about to hit your desired temp. combine the meat and onions and add the cheese. Let the cheese melt then put it on the hoagie roll. All done now.
Tabasco Pepper Jelly Wings
Tabasco Pepper |Jelly Wings By Cajun Rnewbbq Today we cooked up some Tabasco Pepper Jelly Wings. We started with taking the wings put them in a bag and poured some Tabasco sweet and spicy on them. Use as much as you wish. Then we put some Uncle Steve's Gator Shake and put them in the fridge for at least 2 hours. Then we got our grill setup. Today we are using the rotisserie basket. Put the charcoal baskets on opposite sides of the grill. After the 2 hours or longer. Take the chicken wings out the fridge and put some more Uncle Steve's on them. Then put them in the Basket and put them on the grill. Let it go for 45 minutes. While that's going time to make the glaze. Take some Worstershire sauce and some Tabasco Pepper Jelly and mix it up (best if it's warmed up). After the 45 minutes take the wings off and start glazing the wings and put them back in the basket for another 15 minutes. After that they are all done.
Chicken Teriyaki by Cajun Rnewbbq First start off with putting your chicken in a bag and pour in: 2/3 cup of Bourbon 2/3 cup of soy sauce 2/3 cup of olive oil 2 Tbs of Garlic powder 2 Tbs of Chipotle powder (to taste..more or less) 1 tsp of salt 1 tsp of black pepper Mix the bag and put in fridge for at least 2 hours. Now time to fire up your grill. Get it to 350 degrees and put you chicken on the grill. At this time mix up a fresh batch of the marinade, bring to a boil and let reduce. At 25 mins start basting the chicken every 10 mins, turning it over and basting both sides. do this till the chicken reaches temp. 165 for chicken breast 175 for chicken thighs.

Crawfish Boudin Stuffed Chicken by Cajun Rnewbbq Today we are doing some Crawfish Boudin Stuffed Chicken. We took a whole chicken and let it air dry in the fridge for an hour before we started working on it. Then we took some Saints and Sinners Competition Chicken Rub (save 15% with code CAJUN2215) and seasoned the cavity. Then we stuffed it with the crawfish boudin.Then pulled back the skin on the breast and seasoned the meat. Then sprayed the whole chicken with spray oil and seasoned the whole chicken. We put it on the smoker at 350 and let it run spraying the chicken with spray oil every 30 mins to crisp up the skin till it hit 165 in the breast and 175 in the thigh.
Shredded Beef Chuck Roast
shredded Beef Chuck Roast By Cajun Rnewbbq Today we're doing up some Shredded Beef with som1836 rub from SucleBusters. Put a coating of Wosrtershire sauce and then put a liberal coating of Suclebusters 1836 rub on the chuck roast. Put it on the smoker at 250 degrees. Turn it over every hours and spritz it with beef broth. At 160 degrees pull it off the smoker and put it in a pan and pour some beef broth, worstershire sauce and some more Suclebusters 1836 rub on it. Then put it back on the smoker till it hits 203 degrees. Pull it off and let it rest for a couple of hours to cool down . Then shred it.

Happy Trails Chili By Cajun Rnewbbq First you start off by browning off 2 lbs of ground meat. Then drained the fat and added the meat to a dutch oven. Then added 1 cup of water, 1 can of 16 oz tomato sauce, and the whole package of Happy Trails Chili Mix. Stir it up and I put it on my pellet smoker at 300 degrees for no less than 2 hours. I like a thicker chili. So the longer you cook it the tighter and thicker it gets. After you pull it off the grill give it a few minutes to cool down so you can eat it safely.
Fried Artichoke Hearts
Fried Artichoke Hearts by Cajun Rnewbbq Take a can of Artichoke hearts and drain the liquid. Then take a bag of your favorite seasoned fish fry and split it into 2 bowls. In 1 bowl pour some water into it making a batter. Once you get it to the consistency you like . Pour the artichokes into it. Now move onto the oil. Get it into a pot and get it up to 350 degrees. Once the oil reaches 350 degrees, take the artichokes from the batter and put some into the dry mix. Now time to fry those up. They cook up real fast. So do them in batches. Work on the next group while some are frying. Once done. Eat em up.
