Italian Pizza Salad 🥗
Last night I ate the best salad, I know it's hard to really get excited over salads but for some reason this salad just really hit all the right spots. The salad and dressing brought me back to a time when we would buy pizza and antipasto every week at the local pizza parlor. Something about that salad, in particular the dressing was always soo darn good! Simple but flavorful with lots of herbs and a tang to go with it. I've been craving the salad now for weeks. We paired this salad last night with some homemade english muffin bread, and a glass of red wine.

2 Easy Spread, Lentil And Eggplant Spread Recipe
Lentil Spread; Ingredients: 1 Cup of Red Flat Lentils, 1 Cup of Yellow Lentils, 1/2 Cup of tahini (you can add more according to your taste), half CB apple cider vinegar, 2 tsp mustard, 1 tbsp nutritional yeast (optional), 1 tsp onion powder, 1 tsp. garlic powder, half a tsp turmeric, 1 heaping tsp cumin, 1 tbsp taco seasoning, 1 pinch leaf salt (optional). After pulling in the machine until it becomes pure, extra virgin olive oil and bagel spice for the serving plate (you can find the material link in my profile) Eggplant Hummus; Ingredients: 2 cups of boiled chickpeas, 1 large-sized eggplant (oven baked), 2 🍅 oven baked,1 glass of vegetable stock, 2 cloves of garlic. Mix until it becomes pure. 1 tsp cumin, 1 tsp taco seasoning, freshly ground black pepper. I used dried mint for the top.
