Making vegetarian, Broccoli Soup
A wonderful and healthy option for a dinner or snack is broccoli soup. Besides being delicious and easy to prepare, it also has a tonne of health benefits. Being a superfood, broccoli is full of essential nutrients and minerals that support the maintenance of a healthy body. These contain the vitamins C, A, K, and B6, in addition to iron, calcium, and magnesium. Broccoli is also a fantastic source of fiber, which helps to keep your digestive system functioning properly.
As the weather gets colder, soup is in order
On this video, I made a Korean-inspired soup with chuck roast beef cut into small pieces. This can be substituted with any protein or can be made into a vegetarian version. Next onto the pot were diced daikon, store-bought kimchi, silken tofu and green onions from the backyard garden. Then, I spooned the soup onto a stone pot and cracked an egg on top. Let's eat!

A heathy and flavorful soup with garden vegetables
A slab of salmon turned into soup with some freshly picked vegetables from the backyard garden - kale, tomatoes, lemon verbena and peppers. To make it flavorful I added two packets of bonito-flavored seasoning from the Japanese market and then squeezed the juice of a few calamansi or calamondin. Healthy and easy to prepare - a perfect lunch on a busy workday.
