Gluten Free Cookies and Cream Ice Cream Pie
This is one of the best ice cream desserts I've ever had! Gluten-free Oreos stay nice and crispy and the cream mixed in with the ice cream is delicious! We will be making these for our next summer party. They are quick and easy and fun. Enjoy!
Chicken tagine with apricots, tomato and mint from the garden
A great dinner recipe to pull off on a busy weekday. Just put all the ingredients on a tagine, then pop it on a pre-heated oven for about and hour. I used chicken and some backyard harvest - apricots, tomato and mint. Then seasoned with cumin, cinnamon, nutmeg along with chopped onion and sliced garlic plus chicken broth.
Watermelon Salad great summer recipe
At first, it might seem that watermelon and onion shouldn't go together, but it is surprisingly tasty! With red wine vinegar and basil, this salad is different, delicious, and, best of all, super easy to make. It's a great addition to any summer party or backyard bbq.

Beef wrapped in lettuce
This is simple, easy and quick to prepare, a perfect lunch on a busy workday. I used skirt steak which I grilled indoor on a stove-top cast-iron griddle and then cut into bite-size pieces. Once cooked I wrapped the beef plus avocado on a freshly-picked lettuce from the backyard garden.
A simple and colorful dinner
Dinner was simple and easy to prepare and also colorful. It has thinly sliced garlic, chopped onion, chicken cut into bite size pieces, carrots, green beans, celery, broccoli, water chestnuts, young corn, two varieties of mushroom and quail eggs. Plus two cups of chicken broth and corn starch to thicken the sauce.
Zucchini Muffins with Blackberries | Easy Yummy Recipe
I'm in our off-grid kitchen today, baking up some super delicious & super easy zucchini muffins with blackberries. Zucchini, blackberries & eggs are grown here on the homestead. The recipe is below: Ingredients: 2 large eggs 1 cup sugar 1 cup vegetable Oil 1/2 cup milk 1tsp vanilla 3 cups all-purpose flour 1tsp salt 1 tsp baking powder 1 tsp baking soda 2 cups zucchini 1 1/2 cup blackberries or fruit of your choice Instructions: 1. Grease 2 muffin tins 2. Preheat the oven to 350 degrees 3. Beat eggs, sugar, oil, vanilla & milk together in a large bowl 4. In a separate bowl, combine flour, salt, baking powder & soda 5. Add dry ingredients to wet ingredients and blend well 6. Gently stir in zucchini and berries until mixed in Put in greased muffin pan. Muffins cook time between 22-26 minutes.
Sautéed Peaches
Delicious peaches with spices and nuts. This is one of my favorite peach recipes. It's quick and easy to make and it's a tasty and unique dessert. And it's scrumptious with ice cream! It's wonderful with fresh peaches, but frozen peaches work just as well. Enjoy!
Daikon, kimchi and tofu soup
A Korean-inspired soup with daikon, kimchi, soon tofu and shrimp. The daikon was cut into cubes then boiled until soft. Daikons are similar to radish, but has a milder taste. A sprinkle of crab and clam seasoning, two packages of organic soon (extra soft) tofu, kimchi and shrimp.
Cavatappi with bacon and green peas
Another simple, quick and easy recipe, a perfect dinner on a busy work day. A box of cavatappi pasta or any pasta to your liking, smoked applewood bacon cooked on the air fryer, freshly shredded parmigiano reggiano and green peas. Just boil water, add salt and olive oil, add the pasta, toss the water, add the cheese and green peas then top with crushed bacon.

An easy recipe that is delicious and beautiful! This can be made with any kind of berry, peaches, mangos, or whatever you'd like! The crumble is simple and can be made ahead if needed. Baking the crumble for a bit before adding it to the berries helps to make it more crunchy and buttery tasting. The Gluten-free flour mixture I used is Cup4Cup I also like King Arthur blend.

Peanut butter, marshmallows, coconut, and the secret ingredient, butterscotch chips! These treats are amazing! I love the flavor, the texture and the convenience of these great snacks.
