Rib seasoning : 1/2 cup kosher salt 1/4 cup MSG 1/4 cup paprika 1/4 cup chili powder 1/4 cup light brown sugar 2 Tbs. garlic powder 2 Tbs. onion powder 1 tps. cayenne pepper Next get his mopping sauce together. This is to make enough for 4 slabs of 4ribs. 1 Gal. distilled white vinegar 1 lemon cut up 1/2 cup ground black pepper 1/2 cup cayenne pepper 1 1/4 Tbs. red pepper flakes 2 cups white sugar Let the vinegar simmer for 5 min. on med.high , then add all the other ingredients. Let simmer for 10 mins. Then its done. Put the ribs on the smoker at between 225-250 degrees. Every hour mop both sides of the rib. Keep doing this till the ribs bend but dont break, at least 5 hours. He doesn't wrap his ribs at all.
