Watch as I prepare a pork butt that’s roasted in a spicy tomato sauce.
This is a recipe from my grandmothers Cucina. Pork roast, bone-in with peas and carrots. The difference here is I’m using frozen peas and carrots since I have them available. I made a rub of salt, pepper, oregano, basil, thyme, rosemary, crushed red pepper, parsley, and garlic powder. Then I rubbed that all over the roast prior to searing it. I also scored the fat section with cuts that were not deep cross crossed so the rub was inside all the nooks and crannies. I also added garlic cloves around the roast, top, and bottom by making a hole with a knife and stuffing them inside. Once this was done I seared the meat. With the juice, I added wine, garlic cloves, and half an onion and sautéed. Then added the crushed tomatoes and let that stew for a few minutes. then added the roast, placed the dutch oven in the oven at 275 for the 1st 2 hours then reduced to 250 for the final roasting. I wanted to show you a quick way to brown and prepare the meat for a tomato sauce without using a skillet to bring the meat. I’m using chuck 80/20 for this recipe, and it works the best for me. Flatten it out on a sheet tray and place it in a 450-degree oven for about 15-20 minutes, depending on your range. You want a little crust on top. Peanut allergies or sesame seed/oil allergies are dangerous. Whether you have them or know someone who does, learning what to use in place of peanut, sesame oil, and seeds is vital. Even when dining out, you should know what the restaurant uses for oils. Here I give you some tips on what to substitute for those items. Buon Appetito!!
Watch as I whip up a new chicken salad recipe for spring, summer, or anytime.
It's all about the lime and honey. I used a rotisserie chicken that Patti picked up last night. For today's salad, I only used the white meat, but you can use both or just one or the other if you like. I mean it's your recipe. I also whisked into emulsion some olive and avocado oil along with balsamic vinegar and the juice of one lime. I squeezed the second lime over the salad after mixing it up. I also added celery, cucumber, carrots, peppers, spices, and herbs. Whatever I could round up. This show is all about using what you have on hand without going to the store. Although you can always go shopping if you choose to enhance this recipe. But if you have a pantry full of food you can do anything you want. Buon Appetito

Leftovers! Are they the scourge of your holiday meals? We usually have an abundance of leftovers since I cook for anywhere for 10 to 20 people, and as always, we overestimate who's going to show. Of course, that leaves us with meals for a couple of days, and once we're tired of them, it's freezer time. Once in the freezer, I have time to consider what to make with all that's left. In this case, the ham will be used for ham salad, video coming this week, and lentil or pea soup. The ham bone is already in the freezer, waiting for its day in the soup of choice. The beef from the beef ribs will be used for a weeknight meal next week. I haven't decided on that recipe yet, but I'll keep you updated. As for the beef bones, they're going into a pot of boiling water to clear them of the spices we marinated them with so the dogs can enjoy some delicious bones as an Easter treat.
