(VIDEO) Carrera's Tacos Opens in Greenwood Village
After its start as a popular Denver area food truck, Carrera's Tacos recently opened up a brick and mortar location in Greenwood Village, Colorado. Carrera's Tacos offers California-style Mexican food in a small, but lively taco shop-like setting, right next to Pindustry and Grange Hall on Arapahoe Road. The brothers behind Carrera's Tacos wanted to bring a West coast style of Mexican food to Denver, including San Diego's own California burrito, street fries, and some of their food truck favorites.

However, when it comes to finger food and easy-to-eat offerings, few menu items can compete with the taquito. The rolled-up, fried to a crisp taco is just about as simple as it gets. Tortilla, filled with meat, possibly cheese, then rolled and fried. It’s easy to use, perfect for dipping into any collection of sauces, and it is a staple for everything from after-school meals to tailgates. And now, a taquito-centric restaurant is making the trek from Irvine, California to Arizona with not just a single location, but dozens.

Walk in any direction and you’re going to run into some kind of a restaurant, truck, stand, or cart on the side of the road selling some kind of Mexican food. For many locals, there are a handful of favorites, going to one restaurant over another based on if they want fish tacos with a corn tortilla, a chorizo burrito, a tripe taco, or an expertly crafted michelada. Mexican food in the Old Pueblo isn’t one-size-fits-all, which is one of the reasons why the food style has thrived in the city. And now, there is about to be one more to the mix. One more, that is, with a BBQ twist.

Fast-Food Mexican Chain from Utah Opening First Location
Another Mexican restaurant is opening.Erick Su/Unsplash. When it comes to tasty Mexican food, the first state that comes to mind likely isn’t Utah. However, one Utah-based Mexican fast-food chain has honed its craft, by making everything on its menu from scratch, every single day (including the tortillas), and is expanding into new markets. Concord's Taco Trail never grows cold
Quesabirria tacos from Tortilleria El MolinoClay Kallam. So a couple years ago, the folks at VisitConcord – who are charged with drumming up business for Concord merchants – had a brilliant idea. Instead of promoting what every other city promotes (downtown restaurants, concerts in the park, etc.), they realized they were sitting on a culinary gift of the gods. The Taco Gods, to be exact, who had bestowed 40 or so family-run taquerias on the city, taquerias that almost always deliver the best of Mexican food at friendly prices.

Historical Restaurant, Inventor of the Chimichanga, Celebrates 100th Anniversary
Celebrate 100 years of Mexican food.Jeswin Thomas/Unsplash. There’s something about deep frying food that completely revolutionizes a recipe. Whether it is deep-fried ice cream, Oreos, or simple french fries, something magical happens with the additional layer of fat applied to food. The protective casing helps lock in the internal flavor while adding another layer of complexity to it. And while it might not be easy on the gut, it does wonders for taste buds. And now, the inventor of one of the most widely celebrated deep-fried foods is celebrating its 100th anniversary.
