New Smoked Chicken Sandwich Restaurant Coming

There has been an explosion of chicken restaurants popping up throughout the Valley over the last year or so, with brands flocking into the metro area from all around the country. For chicken sandwich lovers, this has been an exciting time. And yet, most of these fried chicken restaurants focus specifically on the sauces, and not necessarily on flavoring the chicken itself. One chain that looks to be moving into the greater Phoenix area will do exactly that and hopes to bring a new take on the rapidly expanding chicken market.

Not so Boring Grilled Chicken
You can call this your basic grilled chicken with rice and veggies meal, except it has a bit more fun to it! I make this when I am getting bored of the weekly grilled chicken and it’s so east to make! Simply preparing the chicken as you normally would. The only difference is in the last 2-3 minutes of grilling, add ketchup and mozzarella to the chicken. You can also bump of the flavor with garnishing with freshly chopped basil! This tasted like chicken pizza, if you will. As you see I made white rice and grilled veggies to go with the chicken. Basic yet with an easy twist, you get a different flavor!

Easy Grilled Chicken and Eggplant
I love grilled vegetables especially eggplant 🍆 and when it’s this tasty, who can resist? This grilled eggplant and chicken dish a great meal idea for adding in vegetables or if you are looking for a low carb option. 1. Slice eggplant medium thickness. Brush with olive oil, sprinkle salt, and place on a hot grill until softened. 2. Slice chicken in strips and brush with marinade of choice. I made my own with oil, yellow mustard, garlic, oregano, smoked red pepper flakes, salt & pepper. Grill chicken until fully cooked. 3. In a small sauce pan, add passata or tomato sauce, garlic cloves, basil, oregano, salt, and pepper. Place on medium low heat and allow to simmer about 5 minutes or until fragrant. 4. Once eggplant, chicken, and sauce are cooked, it’s time to assemble. Lay grilled eggplant slices on a plate. Add a layer of sauce, then chicken, then another layer of sauce. 5. Finish off with gated cheese of choice and enjoy! I used 1 eggplant & 2 chicken breasts- 2 servings

So fun story, we didn't own a grill until a few weeks ago when Brian acquired one from one of our sweet neighbors. Brian fixed it up and ordered a rotisserie so of course he had to break it in before we leave for vacation. He made pollo asado with a homemade salsa verde and homemade tortillas. It was all so great! Brian, being from California has always talked about loving Pollo Loco and so he wanted to put his own spin on things (literally). Every part of this meal was so delicious!
