Watch as I make an Italian tuna melt for lunch today.
This recipe is a tiny bit different than my normal Italian tuna, but it’s still fantastic. When you add it to bread, cheddar cheese and melt it on the stove it’s perfect. Watch, enjoy and see you next time. Buon Appetito!
Watch as I prepare a pork butt that’s roasted in a spicy tomato sauce.
This is a recipe from my grandmothers Cucina. Pork roast, bone-in with peas and carrots. The difference here is I’m using frozen peas and carrots since I have them available. I made a rub of salt, pepper, oregano, basil, thyme, rosemary, crushed red pepper, parsley, and garlic powder. Then I rubbed that all over the roast prior to searing it. I also scored the fat section with cuts that were not deep cross crossed so the rub was inside all the nooks and crannies. I also added garlic cloves around the roast, top, and bottom by making a hole with a knife and stuffing them inside. Once this was done I seared the meat. With the juice, I added wine, garlic cloves, and half an onion and sautéed. Then added the crushed tomatoes and let that stew for a few minutes. then added the roast, placed the dutch oven in the oven at 275 for the 1st 2 hours then reduced to 250 for the final roasting. Buon Appetito!!!

Watch as I prepare meat for a tomato sauce & talk peanut allergies alternatives for cooking.
I wanted to show you a quick way to brown and prepare the meat for a tomato sauce without using a skillet to bring the meat. I’m using chuck 80/20 for this recipe, and it works the best for me. Flatten it out on a sheet tray and place it in a 450-degree oven for about 15-20 minutes, depending on your range. You want a little crust on top. Peanut allergies or sesame seed/oil allergies are dangerous. Whether you have them or know someone who does, learning what to use in place of peanut, sesame oil, and seeds is vital. Even when dining out, you should know what the restaurant uses for oils. Here I give you some tips on what to substitute for those items. Buon Appetito!!
Watch as I give a tour of our kitchen, pots & pans, spices & herbs, including the kitchen sink.
I’ve been asked over and over about our kitchen, the pots, and pans I use, as well as equipment, herbs & spices, and more. So today I’m giving a tour of our messy kitchen. Sorry for the mess and I am sure Patti will be upset I didn’t clean it up, but I always say a messy kitchen is a well-used kitchen. Ours is well used. So enjoy and see you Friday!
Watch as I whip up a new chicken salad recipe for spring, summer, or anytime.
It's all about the lime and honey. I used a rotisserie chicken that Patti picked up last night. For today's salad, I only used the white meat, but you can use both or just one or the other if you like. I mean it's your recipe. I also whisked into emulsion some olive and avocado oil along with balsamic vinegar and the juice of one lime. I squeezed the second lime over the salad after mixing it up. I also added celery, cucumber, carrots, peppers, spices, and herbs. Whatever I could round up. This show is all about using what you have on hand without going to the store. Although you can always go shopping if you choose to enhance this recipe. But if you have a pantry full of food you can do anything you want. Buon Appetito
A pizzaplocalypse in Fresno
New York, Chicago, Detroit, or New Haven pizza seems to be finding a way into our neighborhoods. Whether it's by chain restaurants, local pizza shops, or in the markets, all of these styles are somehow coming to Fresno/Clovis, the Central Valley, and beyond. For right now, we're concentrating on Fresno and Clovis.

Finally, homemade Italian food in Pismo Beach at Pizmo Cafe
This past weekend Patti and I made it back to Pismo Beach along with our son Andrew and his girlfriend Dusti. We wanted to get back there to try the Italian food at Pizmo Cage other than their pizza which we love.
Watch our review of Italian food at Pizmo Cafe and delights at Wooly's while visiting Pismo Beach
We were in Pismo last weekend, and we had a chance to go to Pizmo Cafe to try their Italia dishes and a quick bite of lunch at Wooly's, a very unexpected treat. We finally got to meet the owner of Pizmo Cafe, Nathan. We had a great time talking to him and learning more about how Pizmo Cafe came to be, which will be in another video soon. As I said in the video, the food at Pizmo Cafe is the best I've had since moving to California 15 years ago. It reminded me of homemade. Everything we ordered was excellent!!! If you haven't been to Pizmo Cafe, then get there now! You won't regret it. At the same time, walk down the street and try the steamed clams or carne asada tacos at Wooly's. You'll be glad you did.

Who Has The Tastiest Breakfast In Tucson, Arizona?
They say breakfast is the most important meal of the day. If you can't get breakfast at home, then you will naturally seek out a restaurant. Tucson has many travelers that visit the city every year, and thus there are some great breakfast spots. Sometimes a simple breakfast with a few eggs and some toast is better than a complicated omelet, but there are also times when a complicated omelet will soothe the soul.
Watch as I make ham salad without mayo or cream cheese, for sandwiches or on top of salads
What do you do with leftover ham from Easter if you're sick of now by now? That was my dilemma the other day. I solved that dilemma by figuring on making a ham salad. Although I wanted to make the ham salad without mayo or cream cheese like all the recipes online showed. I looked online for a recipe for Italian ham salad but couldn't find one that stood out. Actually, I didn't find any, so I thought about the recipe I use for Italian tuna or chicken salad. Maybe that would work? That's what today's video is all about. So tune in and watch the show. Here is a list of ingredients (It's totally up to you what you end up using. This is my recipe): celery, peppers, carrots, cucumber, lemon pepper, yellow and Gulden's mustard, basil, Italian herbs, olive oil, balsamic vinegar, tomatoes, Worcestershire sauce, garlic and onion powder (you could use fresh), honey. I hope you give this versatile recipe a try. It's great for sandwiches or on top of salads. Buon Appetito!
Watch as I take Easter leftovers and carve, slice, and figure out what to do with them.
Leftovers! Are they the scourge of your holiday meals? We usually have an abundance of leftovers since I cook for anywhere for 10 to 20 people, and as always, we overestimate who's going to show. Of course, that leaves us with meals for a couple of days, and once we're tired of them, it's freezer time. Once in the freezer, I have time to consider what to make with all that's left. In this case, the ham will be used for ham salad, video coming this week, and lentil or pea soup. The ham bone is already in the freezer, waiting for its day in the soup of choice. The beef from the beef ribs will be used for a weeknight meal next week. I haven't decided on that recipe yet, but I'll keep you updated. As for the beef bones, they're going into a pot of boiling water to clear them of the spices we marinated them with so the dogs can enjoy some delicious bones as an Easter treat. What do you do with your leftovers? Buon Appetito!!!

Making braised chicken and veggies for dinner.

Watch as I whip up breakfast/brunch for the family with fingerling potatoes, chorizo, and eggs.
I decided to raid the pantry and fridge to see what I could come up with for breakfast/brunch for the family. What you see is a mix of what I found while searching through the shelves, freezer, and fridge. Amazing what you can do with what you have on hand. Buon Appetito Mark & Patti P.S.
