White Chicken Enchiladas
Looking for a delicious and easy dinner, these white chicken enchiladas with green chilis may be just what your looking for. I make these simply filled with chicken and cheese, but you could easily go vegetarian with rice and/or black beans, spinach or some pico de gallo. It’s really easy to customize it to your liking. The sauce is creamy and delicious, the tortillas burst with cheesy, chicken goodness and they disappear as fast as I can get them outta the oven! We make this recipe frequently, it’s always being requested by the kids. It’s also great if you want to double it for a pot luck dinner or a dish to pass, it’s always a crowd pleaser.

Oh let me tell you I have a new obsession, these mason jar meals are freaking fantastic! They’re quick, easy and nutritious. These lunches are fantastic to meal prep and make ahead. I’m the envy of all my coworkers, so much so that half of the office is now bringing mason jar meals. The other half doesn’t count their lame (JK!). I just grab and go in the morning, easy peasy! My daughter has started making these in place of the delicious but sodium laced Ramen Noodles (I‘m not hating on Ramen Noodles - I actually love them, but happy we have a healthier alternative).

Rotisserie Chicken Alfredo - Recipe
Chicken Alfredo is one of my favorite recipes. Its a treat for me and my family, I usually try to keep my family on a bit leaner diet, but this week we got some wonderful news and it called for some celebrating! The celebratory dinner request was chicken alfredo, and I'm never going to say no to that! I love this recipe for many reasons, first it's absolutely sinful, with a velvety and creamy parmesan sauce... pure heaven. Second it comes together quickly, less than 30 minutes and with the addition of a rotisserie chicken, it's even easier! Third it's comfort food at it's best, it's filling and everyone loves this dish. I normally pair this with a "light" side salad (arugula, grape tomatoes, pistachios with a drizzle of lemon juice, olive oil and coarse salt) and of course some good crusty bread.
Slow Cooker - Chicken and Gravy
This is one of those meals that everyone will eat in our home, it's quick and easy to make, clean up is a breeze and it's comfort food at it's best, so filling on a cold winter night. I love to serve my chicken and gravy over mashed potatoes, but you could use egg noodles, rice or boiled potatoes in place of mashed. You could serve this chicken and gravy over Texas toast for an open chicken and gravy sandwich. Heck this gravy is so good you could pour it in a mug and drink it! Pair this with some green beans or a salad and you have a easy weeknight dinner.

Chicken Chili with White Beans 🌶️
It's cold out today, snowed overnight and I just about froze my buns off in the barn this am. I decided right there and then that chili would be on the menu for tonight accompanied with some delicious corn bread. If you haven't tried my cornbread - OMGGG try it!!!! So moist and delicious! Perfect to go with this white bean chicken chili. It's only 10 am and I'm already thinking of dinner, it's going to be a looong day - lol. If you can't find fresh peppers then you can always get a 4 ounce can of chili peppers (mild or hot). Sometimes I use adobo peppers in sauce and just chop up a few and add to my chili base. This recipe written as is does have some heat to it, think of a "medium" heat salsa. If you are not a spicy person, substitute the peppers for green and red peppers bell peppers and decrease the cayenne pepper to 1/4 teaspoon. The heavy cream will help a temper the heat.

Don't loose this one friends, it's a game changer. Here it is... my favorite kind of recipe! Easy to make and easy to clean up! Did I also mention it's freakin DELICIOUS! No joke, one pan and maybe one small bowl to mix the spices. It really doesn't get much easier than this. The chicken comes out juicy and tender with the perfect crisp tender veggies. This is one of our favorite weeknight dinners.

Up until I met my spouse I had never had chicken and dumplings. The second that creamy chicken and heavenly dumplings hit my tastebuds I was sold. Today, I am preparing air-fried chicken legs. For this recipe, I use a mixture of spices to make an all purpose seasoning mix. (The recipe for the all purpose spice mix is included down below.) I don't use flour, eggs, milk, or any type of cooking oil. The drumsticks are amazingly delicious! The chicken skin is crispy on the outside, with its seasoned crust and it stays moist and juicy on the inside.

I roasted this bad boy over the burner of my wood stove this afternoon. Then I sliced the chicken breasts and made sandwiches from my homemade cheese bread for supper. Yes, I also baked a loaf of fresh bread while the chicken was roasting. I will be sharing the recipe for my homemade country-style cheese bread soon.

Crock Pot Chicken and Gravy - Nana's way
Certain recipes bring me back to my childhood, the nostalgia of just smelling this chicken and gravy slowly cooking in my kitchen reminds me of my grandmother. When I was younger, once a month I would get to sleep over at my Nana's house. It was always on a Friday night, I would take the bus to her house after school. I can still hear my grandmother saying "It's my favorite girl on my favorite night" as I raced off the bus. Nana was an amazing cook, everything she cooked was divine. She had a way with food. I loved to sit in the kitchen and watch her, it was a dance with her, the way she moved around the kitchen, threw in spices (of course never measuring), knew by touch that the bread, chicken, muffins etc. were done. It was all very exciting and I tried to soak up as much kitchen knowledge as I could from her. On our favorite night of the week, Nana would always have chicken and gravy simmering in the crock pot. She knew it was my absolute favorite, so once a month on our special day we would gobble up bowls of this amazing dish until we were too stuffed to move. Of course Nana would mix it up, sometimes we would eat this delicious dish over rice, mashed potatoes, egg noodles (my personal favorite) or toast. It didn't matter those days are some of my most cherished memories. I make this dish for my family now, and frequently have my daughter sitting in the chair at the kitchen island chatting and helping me cook. It puts a smile on my face to have the time to spend with her.
