Classic Irish Apple Cake
This Irish Apple Cake (aka Kerry Apple Cake) is a super moist and flavorful dessert. Loaded with tart, crisp apples and crunchy toasted nuts. This dessert would be made throughout the apple harvest season all over Ireland, where every farmhouse family has their very own version of this delectable cake. Our Coconut Cream Poke Cake is all made from scratch filled with pudding, topped with whipped cream, and a coconut lover's dream cake. After it's baked, holes are punched randomly throughout the top of the cake then the pudding of choice is slathered on top to fill the holes which is pretty simple to do.

Today, I decided to make some yummy fudge brownie cupcakes. I used a Bisquick baking mix and unsweetened applesauce (as an egg substitute). The applesauce doesn't affect the fudgy flavor of the cupcakes. In fact, you honestly can't taste applesauce at all. It actually makes the cupcakes very moist and the end result is super fudgy cupcakes.

If you are a fan of Oreo cookies, here's a sweet treat that you may really enjoy. Originally, I used to make this cake with regular Oreo cookies. However, my husband is diabetic, so I have to use sugar-free Oreo-style cookies now. If you prefer using sugar, then just use the original Oreo cookies, sugar, and regular powdered sugar instead of the sugar-free products that I use. Either way, the cake is magnificent!

The cake itself is created with a splash or two of hot mocha coffee. You can use caffeinated mocha coffee or decaf. Either way, the cake tastes awesome, especially when it's topped with a thick delicious frosting.
Chocolate Peanut Butter Poke Cake
Try this easy Chocolate Peanut Butter Poke Cake recipe. Mix and bake Devil's Food cake mix according to package instructions. Mix 2 sauces, one with more peanut butter and a little bit of condensed milk and powdered sugar. The other sauce will have more condensed milk, a little peanut butter, and powdered sugar. Once cake is done baking, poke holes all over the top and pour the sauce that has more condensed milk into the holes and spread the remainder on top. Then add the sauce that has more peanut butter on top and spread evenly. Crumble and top with Nutter Butter and Mini Reese's Peanut Butter Cups. Chill for about an hour and enjoy!
