Pasta is so much more than spaghetti and meatballs. There's linguine, penne, angel hair, lasagna, ravioli, and gnocchi, and the marinara, alfredo, and Bolognese sauces all make Italian dishes so popular.

These restaurants in New Mexico are serving up some of the best pasta options around. Dig in!

1. Mondo Italiano, Taos, New Mexico

Mondo Italiano creates a friendly and unpretentious atmosphere at this classic Italian-American restaurant. The homemade fare, billed as distinctly East Coast Italian, is full of bold flavors and fresh, natural ingredients. Menu items like penne ricotta with sausage and peppers or mushroom and ricotta cheese-filled ravioli top the list of favorite pasta dishes. A childhood experience growing up in Manhattan gave Jennifer DeBow the desire for what she wanted for Mondo Italiano. She hoped to capture the flavors of her childhood memories of eating Italian American food on the East Coast.

As a result, Michael came to Santa Fe in 2015 to take up the position of Sous Chef at The Compound. Michael's experience in fine restaurants, his Italian heritage, and his expertise in making fresh pasta made him ideal for running the kitchen at the new Trattoria A Mano. Among his responsibilities, he supervises a staff of eight, designs and executes each night's specials, and ensures that every meal is prepared to his high standards.
