1. Mondo Italiano, Taos, New Mexico

Mondo Italiano creates a friendly and unpretentious atmosphere at this classic Italian-American restaurant. The homemade fare, billed as distinctly East Coast Italian, is full of bold flavors and fresh, natural ingredients. Menu items like penne ricotta with sausage and peppers or mushroom and ricotta cheese-filled ravioli top the list of favorite pasta dishes. A childhood experience growing up in Manhattan gave Jennifer DeBow the desire for what she wanted for Mondo Italiano. She hoped to capture the flavors of her childhood memories of eating Italian American food on the East Coast.

2. Marie's Italian Grill, Deming, New Mexico

You'll say to yourself, "Now that's Italian!" after eating at Marie's located in an old bank building from 1884. The food embodies the best of Italian favorites, from the breaded eggplant appetizer to the ricotta-filled manicotti to the stuffed cannoli. Every meal begins with a basket of bread and oil and garlic for dipping. Don't miss the pasta bar buffet. 

Marie Bennett carried on the family tradition of offering Sicilian Italian cuisine and family recipes in 2015. Marie's offers marinara, meat sauce, and alfredo made with the freshest and finest ingredients from scratch. Four generations ago, the family migrated from Palermo, Sicily, to Philadelphia, Pennsylvania. Since 2003, Marie has been working in the family business as a server and learning about the restaurant business from her parents. Marie's currently occupying the building is an original bank building built in the late 1800s. The building is part of the historic registry and has original marble flooring and two vaults installed when the bank opened.

3. Trattoria A Mano, Santa Fe, New Mexico

In Italian, a mano means handmade. That's what happens at Trattoria A Mano. House-made bread, eight different kinds of pasta, flavorful sauces, and tempting desserts are created daily. The cuisine showcases authentic specialties, seasonally, from other regions of Italy. It's charming, rustic, and a little piece of Italy in the southwest.  

Despite growing up in the San Fernando Valley and attending Le Cordon Bleu College of Culinary Arts, Michael spent considerable time with his grandparents, who live in Santa Fe during his youth. As a result, Michael came to Santa Fe in 2015 to take up the position of Sous Chef at The Compound. Michael's experience in fine restaurants, his Italian heritage, and his expertise in making fresh pasta made him ideal for running the kitchen at the new Trattoria A Mano. 4. Joe's Pasta House, Rio Rancho, New Mexico

Recipes straight from this restaurant owner's Italian grandmother's kitchen have helped put this eatery in Albuquerque Magazine's Best of the City category for multiple years running. Traditional pasta dishes include fettuccini carbonara, penne pasta primavera, manicotti Bolognese and baked cannelloni. Southwest flavors are highlighted in the green chile chicken ravioli. Don't let the old Pizza Hut building that's home to this restaurant deter you from eating here. It's one-of-a-kind. You'll find bonafide Italian pasta specialties.
