Spooky! Don't be afraid, it's just vegetables
by Amanda Jane Snyder
What's scarier? Fruits and veggies? Or starving yourself? You might be overfed but starving. Most Americans are!
What happens when we eat ultra processed foods? Our body never feels satisfied because it's most likely deficient of vital micronutrients. It never feels satisfied and so we stay hungry. We stay hungry and therefore are always eating but starving.
10 ways to sneak fruits and veggies into your meals
- Fruit smoothies/smoothie bowls/juicing
- Side salad at every meal
- Baked potato with veggie toppings
- Veggies and hummus/guacamole
- Soups and stews
- A salad as the main meal topped with your favorite fats and proteins
- Veggies such as broccoli, peas, or tomatoes added to pasta dishes
- Veggies such as cauliflower or sweet potato added to tacos or burritos
- Leafy greens, tomatoes, cucumbers added to sandwiches
- Veggies such as peppers, broccoli, or tomatoes added to omelettes or vegan omelettes
Even after sneaking in these fruits and veggies you still may be micronutrient deficient. The quality of our soil is just not the same anymore so fruits and veggies are still missing a whole host of good stuff that we need. I recommend getting a blood test from your primary care physician and checking the stats. From there, you can determine what you may need a little extra help with through supplements. As a vegan, I do this every year and may swap some things in and out depending on how the tests look. My current daily supplement list leaves me feeling energized and strong!
How do you fit in fruits and veggies into your diet? Are you deficient in any micronutrients? If so, which ones do you struggle to get naturally?
