Easy Homemade Peanut Butter Energy Bites

Ingredients you will need:
- 10 pitted Medjool dates
- ⅓ cup salted dry-roasted peanuts plus 1 tablespoon finely chopped, divided
- ¼ cup smooth natural peanut butter plus 3 3/4 teaspoons, divided
- 1 tablespoon cocoa powder
- 2 tablespoons cocoa nibs
Follow these Step-by-Step directions:
Step 1: Soak the Dates
Put the dates in a small bowl. Pour hot water over them; let them soak until they become soft, about 5 to 10 minutes. Save 1 tablespoon of the water used for soaking; then, remove the dates from the water and set them aside.
Step 2: Make the Date Mixture
Pulse a third of a cup of peanuts in a food processor until roughly chopped, around 8 pulses. Mix in the drained dates, a quarter cup of peanut butter, cocoa, and the date water that was set aside; blend until a dough forms and pulls away from the sides, about 30 seconds. Tranfer the mixture to a small bowl. Stir in cocoa nibs until they are evenly spread. Cover and chill in the refrigerator for 15 minutes.
Step 3: Assemble the Peanute Butter Stuffed Balls
Take a small amount of the date mixture, almost a tablespoon, and place it on a clean surface. Gently press it down to form a round shape that is about 2 inches in diameter and 1/8 inch thick. In the center of the round, add about 1/4 teaspoon of peanut butter. Now, carefully fold the edges of the date mixture over the peanut butter and seal it by pinching it together. Roll the mixture between your palms to create a smooth ball.
Repeat this process with the remaining date mixture and peanut butter. Once all the balls are formed, sprinkle them with the finely chopped peanuts. Place them on a serving plate and refrigerate for at least 1 hour until they become firm.
If you want to store them for a longer period, transfer them to an airtight container and refrigerate for up to 1 week.
