Growing up in China, some of my most lasting memories are the shared meals we had there with friends. A favorite tradition is hot pot, where you cook all your meat, noodles, vegetables, etc. in a flavorful soup base in front of you on the table. Since moving to the Triad, I've been missing this dining option, as the closest hot pot restaurants I've found are in Raleigh (this one is my favorite as they have a robot waiter!) or Charlotte. I'm thrilled to see that a hot pot fusion restaurant (KPOT) will be opening soon in our area so that all of the Piedmont Triad area can now enjoy this dining experience!
For the hot pot restaurants I have been to in North Carolina, they generally give you about 5-6 options for soup bases, with flavors ranging from mild broth like mushroom, to spicier choices with a chili pepper base. Some even let you do a split pot to try more than one base. Next, you choose your meat which typically comes out semi-frozen in a rolled-up shape as you can see in the photo above - my favorite meats in this setting are lamb and crab, along with the beef meatballs. They usually have meatless options as well, like tofu.
Next, you select the type of noodles you want - options include udon noodles, egg noodles, rice noodles, ramen, and a few others and then your starches like lotus root (a personal favorite of mine), potatoes, and a wide variety of green leafy vegetables, and more types of mushrooms than you ever knew existed. Many offer a whole sauce counter where you can choose from a seemingly endless array of mouthwatering flavors - definitely love the places that have this! It looks like KPOT will incorporate some of this hot pot style but with a Korean twist, and a nice beverage menu as well.

Since opening our first location in 2018, KPOT has become a crowd favorite for traditional Korean Barbeque and Hot Pot. They are consistently highly recognized for excellent food, ambiance, and service.
