Hey foodies! In case you haven’t heard, June 7th to June 18 is Las Vegas Restaurant Week. Each spring, Vegas restaurants join together to support a local charity called Three Square, whose mission is to feed those in need in the Southern Nevada area. Since 2007, local restaurants have offered a special three-course prix fixe menu during restaurant week. Some of the proceeds from these special lunch and dinner menus are donated directly to Three Square.

This past month, I had the pleasure of visiting the Mackin’ Wagon for one of their first popups. Recently, I met the owners, Matt and Lisa, on a Las Vegas Foodies Facebook group. I was interested in both hearing their story and trying out their unique lunch creations. Both Matt and Lisa are long-time bartenders in Vegas, but for the past few years, they have been steadily laying the foundations for their food truck, the Mackin’ Wagon. Although Covid slowed down their progress, the owners pushed through and were able to recently open their truck. I’m thrilled for them because the popup I visited was a huge success as the constant stream of customers for the duration of the event never quite seemed to slow down.

We set out to interview the owners, Dawn and Jess, to learn about how their restaurant has kept its doors open since 1973. We enjoyed learning about the ins and outs of their history as well as the original dough recipe and coal-fired oven that make their pizzas so unique.
