Wood-Fired Pizza in Puna - One Moe Pizza

Chef Ellard visits One Moe Pizza in Lower Puna on the Big Island of Hawai'i. He meets the husband and wife team of Daniel and Mary who produce great wood-fired pizza and home-made kombucha for locals in the area, at a roadside operation, next to a lava field, in front of the Pacific Ocean. The pizza is infused with purple potato and cooked in an oven imported from Chicago, using three kinds of local wood, kiawe, ohia, and iron wood.
