Trying White Bar-B-Q Sauce in Alabama
Raise your hands in the comments if you’ve had white BBQ sauce! 🙋🏻♀️ It’s a combo of mayo, vinegar, lemon, and spices, and it was created in Alabama. We went to Decatur, AL to try it at “Big Bob” Gibson Bar-B-Q, which claims to be the birthplace of the recipe, but we’ve since learned that that’s disputed and several families in Alabama claim to have invented it. Nonetheless, we’d never seen or heard of it before coming to Alabama, so we were eager to try a recipe unique to the state. They say that “Big Bob” grilled his chicken for 3+ hours, so he created the mayo-based sauce to help keep it extra juicy. We didn’t try the chicken, so we can’t say if it works, but given its popularity we’d guess it does. So, what was the verdict on white bbq sauce? It was good – even Stephen liked it just fine, and he CAN’T STAND mayonnaise – but we still think of the more typical reds when we go for bbq and will probably just go for those in the future.
