This mother's day made me cook something for my mom. I found hundreds of recipes on the web and finally decided to cook Keto Smothered Chicken Thighs for my mom. The procedure is simple. Preheat the oven to 400 degrees F (200 degrees C). Season 4 chicken thighs on all sides with paprika (1spoon), salt, and pepper. Cook 4 slices of bacon in a cast-iron skillet over medium heat until browned. Drain on a paper towel-lined plate. Then cook chicken thighs on medium heat, flip the chicken over and place the skillet in the preheated oven. Bake until chicken thighs are no longer pink at the bone and juices run clear (30mins). Measure the temperature of the chicken (must be around 160° F). Remove chicken to a plate and cover with foil to keep warm. Then Pour in 1/3 cup of chicken broth while whisking up brown bits from the bottom in the skillet. Add 4-ounces of mushrooms and cook until soft. Pour in heavy whipping cream (1/4cup) and whisk together. Then return the chicken into the skillet. Finally, serve after garnishing with bacon. My mom loved it and me too.
