Elgin Pizzeria Serves Up Pies to Die For

With four locations, including Elgin, Hoffman Estates, Northbrook, and Oswego, Chicago Pizza Authority, or CPA, covers the waterfront when it comes to exceptional pies.

My husband and I order food from the Elgin location, which is tucked away in a little strip mall on Summit Street, on the reg.

In business since 1983, which is a feat these days, CPA appears to do everything right. The menu is pretty standard pizzeria fare: Appetizers cover a wide range of tasty starters like hot wings, mozzarella sticks, and my personal fave, jalapeno poppers. You can't beat that combination of the crispy outer shell, tangy pepper and, the melty cream cheese at its core.

Craving a sandwich? CPA serves up great burgers, Italian beef, meatball subs, grinders, breaded chicken sammies, and more. Prefer to skip the meat? Check out CPA's scrumptious Eggplant Parmesan sandwich. Eggplant, mozzarella, and marinara sauce on a French roll. Total comfort food!

Salad lovers will find plenty of options like Caesers, with or without grilled chicken, Buffalo chicken salad, mixed greens, again, with or without meat, and a standard dinner salad.

The dinner menu offers a variety of pasta, baked chicken, ribs, fried shrimp, and even fried cod.

CPA's pizzas are the star of their lineup. Even the pickiest pizza aficionado will find a pie to love. From standard pies smothered in cheese, marinara sauce, and sausage or pepperoni, to buffalo chicken pizzas to taco pizzas to a whopper called The Chicago Stockyard, which will satisfy the most voracious appetite, you can't go wrong here.

The veggie pies are awesome, too. Who needs meat when you can have a pizza smothered in mushrooms, onions, and spinach?

With that said, to me, the pizza that is worthy of raving about is the Margherita pizza. Even my hubby, who loves meat is a huge fan of this pie. Simply prepared and so flavorful, the Margherita features a perfectly crispy thin crust, olive oil, fresh tomatoes, fresh basil, and of course, a goodly helping of ooey, gooey, mozzarella cheese. I could eat this five nights a week!

The fresh basil gives this pie a lovely, herbaceous quality that will captivate your tastebuds.
