The story of Jimmy John's Sandwich Restaurants is an American success story. The chain is headquartered in Champaign, Illinois, and was founded by Jimmy John Liautaud in 1983.
THE BEGINNING. Our founder, Jimmy, had two options after high school - head to the military or open a business. He opted for sandwiches, and in January of 1983, the first Jimmy John's was opened in the college town of Charleston, IL. Liautaud was nineteen years old when he opened the first Jimmy John's. He had borrowed $25,000 from his father. The first store was in a garage in Charleston, Illinois, which had rent of $200 a month. He purchased a used refrigerator, a chest freezer, an oven, and a meat slicer. Jimmy John's delivered sandwiches to the nearby university dorms and handled out free samples which helped them realize a profit in the first year of business. The son bought out his father's share of the business in 1985. Jimmy John's has nearly 3,000 locations with 98% of them being franchises.

The original menu included four sandwiches, which were ham and provolone, turkey, tuna salad, and salami. They have at least eighteen offerings now plus other food items such as cookies and chips. They serve food with fresh ingredients and innovative ideas.
If you don't want bread, you have the option of getting a sandwich with fresh leaves of lettuce to make a lettuce-wrapped unwich. It is all sandwich with no bread.
