Shrimp, zucchini, and saffron risotto
There is no gluten in this risotto.
In fact, rice is a cereal that doesn't have this protein which, in many people, can lead to digestive problems.
There are also no dairy products (derivates of milk), another category of food that can create problems. For this reason, shrimp, zucchini and saffron risotto can be safely included in an intestinal re-education process, technically called FODMAP.
Ingredients for 4:
400 gr. classic rice for risotto;
400 gr. shrimp already peeled and cleaned;
a sachet of saffron or a level teaspoon;
1 courgette (zucchini vegetable).
How it is done:
Boil the shrimps in lightly salted water. When they are cooked, drain them but keep the cooking water.
Lightly toast the rice in a rice cooker or large pan with a high edge, adding the cooking water from the shrimps.
Cook over medium heat until it is al dente.
Stew the zucchini separately, cooking them in a pan with a lid. If you prefer a stronger flavor you can add a tablespoon of olive oil.
During the last 2-3 minutes of cooking, add the shrimps, courgettes, saffron and mix with a wooden spoon so that the flavors blend better.
Put the resulted risotto into a deep plate, and serve hot.
You can also decorate it with rosemary. You can use a sprig of rosemary or a few leaves of sage, to give a touch of color and enhance the scent of the dish.
Normally, you should not use milk derivates, but if you like it - you can add on top of the dish your favorite grated Parmesan, to give even more taste to this extremely simple and tasty dish.
