Portland's Pine State Biscuits serves up a mouthwatering assortment of breakfast sandwiches

There's no shortage of great brunch places to visit in Portland. But Pine State Biscuits offers a unique treat that you won't find at a lot of other places. It's in the name...biscuits are the headliner at this local favorite.

Pine State Biscuits began as a brainchild centered around…what else? The quest for the perfect, buttery, flaky, homemade biscuit. Kevin Atchley, Walt Alexander, and Brian Snyder knew biscuits all too well from growing up in North Carolina, but having relocated to Portland, Oregon, they craved the down home cooking they knew from childhood. So they banded together and decided to bring the Southeast to the Northwest. After several months of trials, tests, and “biscuit tasting parties”, they settled on a single recipe. The only void left to fill was to share their creation with the public...and in May of 2006, Pine State Biscuits began serving their unique version of regionally inspired southern cuisine to throngs of Portlanders.
Pine State Biscuits started out as a project at the Portland Farmer's Market, but their runaway success soon led to them opening a "bricks and mortar" location.
The start of the menu is their variety of biscuit sandwiches. There are over ten biscuit sandwich options. Favorites include "The McIsley", a combination of fried chicken with pickles, mustard & Oregon Growers Wildflower honey, and "The Essential", which combines grilled marinated steak, grilled onions, and roast pepper aioli on a buttermilk biscuit.
Another great option is "The Reggie". The regular "Reggie" is tender fried chicken, bacon, and cheese topped with sausage gravy, but you can also get the "Veggie Reggie" which offers a vegan sausage patty, tofu bacon, and cheese which is topped with shitake mushroom gravy.
Vegetarians may also like "TheRegina" which is a biscuit stuffed with eggs over easy and braised greens that are doused with Texas Pete Hot Sauce.
If you want to feel virtuous, go with "The Wedge", which has fried chicken, a fried green tomato, a wedge of iceberg lettuce, and house blue cheese or ranch dressing. Good luck getting your mouth around this gigantic salad on a biscuit.
You can also choose to "build your own biscuit" to create your favorite flavor combinations. Or try one of the other southern-style classics like "shrimp-n-grits", a corn dog, or the chicken pot pie.
If you prefer your biscuits smothered, Pine State Biscuits offers several "biscuits and gravy" options as well. You can combine them with a side of bacon and some hashbrowns for a special treat.
For the perfect hangover treat, try the "hash ups": golden hash browns with grilled onions, mushrooms, and melted cheese with your choice of chopped country ham, smoked brisket, chopped fried chicken, sausage, or bacon.
Speaking of treats, be sure to try the "fried green tomatoes". They are lightly breaded with a soft but not mushy tomato slice inside, and comes with a side of ranch in a generous portion.
Pine State Biscuit also offers a unique sweet option: housemade "pop-tarts". Unlike the chemical-filled treat of your childhood, these pop-tarts are made with fresh local ingredients and unique flavor combinations that change each month. You also can't go wrong with their giant bourbon caramel cinnamon roll or biscuit beignet.
Pine State Biscuits now has six locations: five in Portland and one in Reno, Nevada. They offer dine-in and carry-out options and are available on local meal delivery apps. Prices on most items range from $10-12 for large and generous servings.
