My dad passed away a few years ago. These cookies were his absolute favorite, and every time I make them, I'm instantly reminded of him. Especially during the holidays, I like to pull out this recipe and make a batch. In my own way, it's just a gentle reminder of how much I miss him. The smell of these cookies baking in my oven brings back a flood of wonderful memories.

These ginger molasses cookies have just the right amount of chewiness and softness in a thick cookie. It has a delicious molasses flavor with all those warm spices that warm your insides. These cookies are full of flavor, have a soft, chewy texture, and are easy to make.


  1. Don't skimp on your spices, and choose a dark molasses (not a back strap that can be a bit overwhelming) to give your cookies that depth in flavor.
  2. Make sure you chill your dough for at least 45 minutes. This helps give your cookies their thickness; if you don't chill the dough, your cookies will be thin (still delicious but thin in consistency). In addition, it's hard to roll your dough if it hasn't been chilled.
  3. Roll your cookies in some raw sugar for extra crunch, then bake.Don't overbake your cookies, or they will be harder in texture, not soft and chewy.

Prep Time: 10 minutes; Cook Time: 8 minutes; Chilling Time: 45 minutes; Serves: 30 cookies


  • 2 3/4 C. flour
  • 2 tsp. ground ginger
  • 1 tsp. cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. ground black pepper
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 1/2 sticks of softened unsalted butter (3/4 C.)
  • 1 C. dark brown sugar (packed)
  • 1 egg
  • 2 tsp. pure vanilla extract
  • 1/3 C. dark molasses (not back strap)
  • 1/3 C. raw sugar (for rolling your cookies in)


  • Using a large bowl, add your flour, spices, baking soda, and salt and sift them together.
  • Using a stand mixer, add your butter and brown sugar and beat until light and fluffy. Then add in your molasses, egg, and vanilla extract and beat until combined.
  • Next, on low speed, slowly add in your sifted flour mixture (1/2 at a time).
  • Cover your dough and place it in the fridge to chill for at least 45 minutes.
  • When you are ready to bake your cookies, preheat your oven to 350 degrees Fahrenheit and line your cookie sheets with parchment paper.
  • Using a small plate or pie pan, add your raw sugar. Using a 1–1/2 tablespoon, scoop out your dough and roll into balls. Then roll each ball into your raw sugar.

  • Add your cookies to your prepared baking sheets, 2 inches apart, and bake for about 8–10 minutes. Bake one tray at a time and use the middle rack in the oven.
