How do I put into words just how amazing these cookies are? These are the absolute best cookies out there; they were a favorite of mine as a child and continue to be one of my favorites as an adult. They are super simple to make; you probably have all the ingredients right now to make them, and who doesn't love the combination of peanut butter and chocolate with chewy oats? This is one of those recipes that brings back so many fond memories from my childhood. They have the best fudgy consistency and will forever be a frequently found cookie in my house.

These no bake chocolate peanut butter cookies can be made in less than 20 minutes with simple panty ingredients.

ProTips:

  • Your cookies are dry and crumbly?? Your cookie mixture boiled for too long (remember, this is not a recipe you want to rush, so don't go cranking up the heat on the stove when making). You want to keep your heat on a low or medium setting, and using a timer, boil the mixture for 1 minute.
  • Your cookies are runny and sticky or won't set up?? This happens when you don't boil your mixture long enough. If you live in an area with high humidity, it can also affect your cookies, or you may have just rushed the process. If you live in a high-humidity area, you will need to boil your mixture for another minute or so. Use a timer to keep track of your time.

Ingredients:

  • 1 stick of butter (salted) cut into chunks
  • 1/2 C. milk (whole or 2%; don't use skim)
  • 1 C. brown sugar, packed
  • 1 C. sugar
  • 1/4 C. cocoa powder
  • 2/3 C. creamy peanut butter
  • 1 1/2 tsp. pure vanilla extract
  • 3 C. Quick oats (instant oats)

Directions:

  • Line your cookie sheets with parchment paper. Set to the side.
  • In a medium-sized saucepan over low heat, add your butter, milk, sugars, and cocoa powder. Don't rush the process; if you crank up your heat, your ingredients may not combine properly, hence you will get cookies that don't set.
  • Using a wooden spoon, stir your ingredients frequently until your butter has completely melted.
  • Slowly increase your heat to medium, continuing to stir, bringing your mixture to a boil.

  • Once your mixture comes to a boil, stir constantly for 1 minute (use a timer!) and then remove your mixture from the heat. Stir your mixture for 10–15 seconds once off the heat.
  • Next, add your peanut butter and vanilla extract. Stir until the peanut butter is fully incorporated into the mixture.
  • Toss in your oats and stir until completely covered in the peanut butter chocolate mixture.

  • Using a tablespoon scoop, drop your cookie mixture onto your prepared cookie sheets.
  • Allow your cookies to set up and cool (around 30 minutes). The longer they sit, the harder they become.
