I portion these cookies into bite-sized pieces, allowing you to effortlessly consume them. They look amazing on a cookie tray. The cookies add pretty pops of color. The mini chocolate chips are perfect little additions to these cookies. If you want a bigger cookie, then just make the size to your liking; if bigger, you could use normal chocolate chips.


Make sure you chill your dough; it's imperative that your dough is cold, otherwise the cookies will spread. In addition, chilling your dough will allow your flavors to meld.

Prep Time: 10 mins; Cook Time: 8 mins; Total Time: 18 mins; Servings: 30


  • 2 sticks of unsalted butter softened (1 cup)
  • 2/3 C. confectionary sugar sifted
  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 1 tsp. mint extract (you could also use peppermint)
  • green food coloring
  • 3/4 C. mini chocolate chips
  • For rolling and coating, use additional confectionary sugar.


  • Using parchment paper, line your cookie sheets.
  • Using a stand mixer, add your butter and confectionary sugar and beat until light and fluffy.
  • Gradually add in your flour, salt, and extract. Mix until just combined.
  • Add the color gradually, drop by drop, until you achieve the desired color.
  • Add your mini chocolate chips and stir.
  • Using a 1 tablespoon scoop, measure out your dough and form it into a ball. Add your balls to your prepared cookie sheets, place them in the fridge, and refrigerate for 45 minutes.
  • Warm your oven to 375°F.
  • Place your cookie sheets in the oven and bake for 7 to 8 minutes. Do not overcook your cookies; you want them to be very lightly browned. Allow your cookies to cool for 5-7 minutes on the cookie sheet.
  • Using another parchment-paper-lined cookie sheet, add a generous coating of powdered sugar. Add your slightly cooled cookies and dust with the confectionary sugar.

  • Now let your cookies cool completely.
  • Once your cookies have completely cooled, do another dusting of confectionary sugar. Using a small bowl, fill it with confectionary sugar and gently drop in one cookie at a time. Coat your cookie with powdered sugar.
  • Once coated, remove it and store it in an airtight container.
