If you love coconut, then you must make these! These are some of my absolute favorite cookies! They are so reminiscent of the almond joy and mounds candy bars. These simple Almond Joy Cookies need just four ingredients and no mixer! No pounding, no chilling—just mix 'em up and toss 'em in the oven! You'll adore these ooey, gooey, delicious cookies!

These cookies have the perfect chewy consistency with the crunch of chopped almonds and bursts of chocolate chips. Pure bliss! I can guarantee these cookies are going to be the first eaten on this years cookie trays!

Prep Time: 5 minutes; Cook Time: 12 minutes; Total Time: 17 minutes


  • 1 bag of sweetened coconut flakes (14 ounces)
  • 2 C. semi-sweet chocolate chips
  • 2/3 C. chopped, lightly salted almonds
  • 1–14-ounce can of sweetened condensed milk


  • Warm your oven to 325 Fahrenheit.
  • Using parchment paper, line two cookie sheets. Set to the side.
  • Using a large bowl, add your shredded coconut, chocolate chips, chopped almonds, and sweetened condensed milk.
  • Stir your coconut mixture until well combined.
  • Using a cookie scoop, dish out your dough and place it on your prepared baking sheet.
  • Your dough is going to be sticky. Moisten your fingertips and carefully shape your dough into discs while flattening down the tops.
  • Place your cookies in the oven and bake until the tips of your coconut are turning golden brown, around 12 to 14 minutes.
  • When done, remove from the oven and allow your cookies to cool on a baking sheet.
