'Tis the season to indulge! I've got the perfect treat to elevate your Christmas celebrations! These irresistible Ritz S’mores cookies are a delightful blend of sweet and salty goodness that requires absolutely no baking. Picture this: golden Ritz crackers sandwiching gooey marshmallows dipped in decadent chocolate. Not only are they absolutely delicious, but they are also so easy to make! These heavenly, no-bake cookies are going to dazzle your taste buds. They are sure to spread joy on this year's holiday tray.

  • To really get that s'mores flavor, sprinkle ground Graham crackers over the top.
  • I only use Ritz crackers; they seem to hold up the best for these cookies.
  • I use Ghirardelli Melting Wafers; they are not cheap but melt wonderfully, and the taste is unbeatable. I like to use dark chocolate wafers; that's just my taste preference, but milk chocolate is also good. Utilize the package directions for melting.
  • Make sure to not overload your crackers with fluff, or else it will seep out the sides and make a mess.
  • Use parchment paper so your chocolate doesn't stick.
  • When adding your marshmallow fluff to your crackers, if you grease your spoon first, it will make for easy removal of the marshmallow.

  • 48 Ritz crackers
  • 7 oz. Marshmallow Creme or Fluff
  • 24 oz. Ghirardelli melting wafers (dark, milk, or even white chocolate will work!)


  • 1/2 C. crumbled Graham crackers
  • 1/2 C. pieces of marshmallow
  • 1/2 C. mini chocolate chips
  • 1/2 C. Christmas sprinkles (red, white, and green jimmies, silver balls, white snowflakes—use your imagination!)

  • Place Ghirardelli melting wafers in a microwave-safe bowl and melt per package instructions. Make sure to fully stir in between bursts of heating. Make sure you do not overheat your chocolate, or it will seize (become dull in color and clumpy).
  • Prepare your work space by lining two baking sheets with parchment paper (or wax paper). Add half of the Ritz crackers to your baking sheets.
  • Next, add 1 to 2 tsp. of marshmallow fluff to the center of your cracker; make sure not to overfill your crackers!
  • Top off with another Ritz cracker and gently press together, creating an even layer of fluff between.
  • Then carefully dip the S'mores cracker into your melted chocolate. I typically use a fork or tongs for this. Carefully tap your tongs and fork against the side of the bowl; repeat with all crackers.
  • Once you dip all your cookies, let them set up and harden.
