Prep Time: 5 minutes; Cook Time: 15 minutes; Total Time: 20 minutes; Servings: 6

Ingredients:

  • 1 stick of butter
  • 1/4 C. flour
  • 2 tablespoons minced garlic
  • 2 C. heavy cream
  • 1 C. milk (I use whole milk, or 2%; don't use skim).
  • 1 3/4 C. Parmesan cheese, freshly grated
  • 1/2 C. Romano cheese, freshly grated
  • 1 box of fettucine
  • salt and pepper to taste.
  • freshly chopped parsley

Instructions:

  • Using a large pasta pot, fill it with water and get the water boiling. Once your water has come to a rolling boil, season with salt and cook your fettuccine al-dente based on the package instructions.
  • Using a large skillet over medium heat, melt your stick of butter. Add your minced garlic after the butter has melted. Cook your garlic for about a minute; you want your garlic to be fragrant and sizzle in the butter, turning a golden brown.
  • Sprinkle in your flour to make your roux. Whisk it into your butter and garlic. Allow your flour to cook for a minute or two so the raw flour taste isn't present.

  • Next, begin slowly adding the heavy cream and milk. Whisk continuously while you pour.
  • Allow your sauce to come to a simmer and thicken. Once it begins to thicken, start adding your parmesan and romano cheese, 1/2 cup at a time. Make sure your 1/2 cup is completely incorporated before adding more.
  • Taste your sauce, and add some salt and freshly ground pepper to your Alfredo.
  • Once the fettuccine is cooked, drain (do not rinse your pasta) and toss in your sauce. Coat well.
