I adore Thanksgiving, and especially Thanksgiving leftovers. These stuffing bites are out of this world! They completely turn your stuffing from a side dish (under the shadow of the primary attraction, the "turkey") to the main attraction! The cranberry dipping sauce is tangy, sweet, and complements the sausage magnificently.

Each year, I prepare additional portions of the stuffing and cranberry sauce in order to prepare these delectable bites.

PREP TIME: 10 minutes; COOK TIME: 25 minutes; SERVES: 8

Ingredients:

Sausage-stuffed bites

  • 3 cups of homemade stuffing
  • .5 lb. of ground hot Italian sausage
  • 75 lb. of ground mild Italian sausage
  • Sea salt and pepper to taste
  • 3/4 C. of freshly shredded cheddar cheese
  • 1/3 C. craisins (dried cranberries) finely chopped or minced
  • 2 large eggs, beaten
  • ¼-½ C. broth (chicken or veggie)

Cranberry Dipping Sauce

  • 1 C. cranberry sauce (homemade or use the whole berry canned, not the jelly)
  • ¼ C of orange juice
  • A pinch of sea salt
  • 1 jalapeño seeded and membrane removed finely minced (optional for some spicy heat)

Directions:

  • Warm your oven to 375 degrees Fahrenheit. Using a cookie sheet with a lip, line it with parchment paper. Set to the side.
  • In a medium-sized mixing bowl, add all of your stuffing ingredients and, using your hands, mix together until well combined.

  • Using a spoon, scoop your sausage stuffing mixture and form it into balls. Drop your balls onto your prepared cookie sheet. You should get about 40 sausage bites.

  • Bake in your preheated oven for 20–25 minutes, until golden brown.

  • As the sausage stuffing balls are baking, make your cranberry dipping sauce. Using a small saucepan, combine all your ingredients (optional jalapenos for some spicy heat).
