  • 2 C. flour
  • 1 tsp. baking soda
  • 1 1/2 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1/2 tsp. sea salt
  • 1 stick of melted butter
  • 1/2 C. packed light brown sugar
  • 2 eggs
  • 1/2 C. hot water (100 degrees Fahrenheit)
  • 1/4 C. molasses

  • 1/2 C. packed light brown sugar
  • 1 tbsp. corn starch
  • 1/3 cup heavy cream or half and half
  • 1 tbsp. butter
  • 1 tsp. pure vanilla extract

Instructions:

Gingerbread Cake

  1. Set your oven to 350 degrees Fahrenheit. Generously grease a 9-inch square pan set to the side.
  2. Using a large bowl, add your flour, baking soda, ginger, cinnamon, and salt. Whisk together to combine.
  3. In a stand mixer, add your butter, sugar, and eggs and mix until well combined. Once combined, add in your hot water and molasses.
  4. Add your wet ingredients (molasses mixture) to the dry ingredients. Stir until just combined; don't overwork the batter.
  5. Grab your prepared pan and pour in your batter. Place your gingerbread into your preheated oven and bake until a toothpick inserted in the center comes out clean (around 40 minutes).
  6. Allow your cake to cool.

Brown Sugar Glaze

  1. Over medium heat, add your sugar, cornstarch, and 1/4 cup of water to a small sauce pan. Whisk the mixture until smooth.
  2. Next, add the cream and butter. Cook the glaze until bubbly and thick. Take your pan off the heat and stir in your vanilla.
  3. Generously drizzle your brown sugar glaze over your warm gingerbread cake.
