The Coca-Cola Cake at Cracker Barrel is a popular and well-known treat that has been on the menu of this famous American restaurant company for decades. Rightfully so! This cake is a great example of how well classic Southern tastes go together. It combines the fizzy sweetness of Coca-Cola with the rich chocolate flavor of cocoa to make a rich and moist treat that is at the heart of every Southerner (and in my case Northerner!).
This recipe if I dare say is better than the original! It has a tender crumb and comes together quickly, it literally melts in your mouth. The frosting is decadent and just enough sweetness to make this cake over the top delicious. When I think of comfort food, a big plate of mashed potatoes, with a few slices of meatloaf and a nice big piece of this Coca Cola Cake is the first meal that comes to my mind.
Ingredients:
To make the cake:
- 2 C regular flour
- 2 C granulated sugar
- 1 stick (8 tbsp) of unsalted butter
- 1 C Coca-Cola (do not use Diet Coke or any version that isn't the original)
- 4 tbsp unsweetened cocoa powder
- 1 C of buttermilk
- two large eggs
- 1 tbsp pure vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
For the Frosting:
- 1 stick unsalted butter
- 4 tbsp unsweetened cocoa
- 4 tbsp Coca-Cola (do not use Diet Coke or any version that isn't the original)
- 4 C confectioners' sugar
- 1 tbsp pure vanilla extract
- 1 C chopped pecans or walnuts (optional but so yummy)
Instructions:
- Set your oven to 350 degrees Fahrenheit. Coat a 9x13-inch baking pan with non stick cooking spray.
- In a large mixing bowl, whisk together your flour and sugar. Set to the side.
- Melt the butter in a medium saucepan. Once melted add your cocoa powder and Coca-Cola. Bring the mixture to a low boil, then turn off the heat.
- Carefully, pour the hot Coca-Cola mixture over the flour and sugar mixture and mix.
- In a medium sized bowl, combine the buttermilk, eggs, vanilla extract, baking soda, and salt. Then stir this mixture into the Coca-Cola mixture until smooth.
- Pour your batter into the prepared baking pan. Using a spatula make sure it's distributed evenly through out the pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the middle comes out clean. Allow your cake to cool in the pan for 10 minutes.
- While your cake is cooling start your icing. Melt the butter in a medium saucepan over medium heat. Bring the liquid to a low boil after adding the chocolate powder and Coca-Cola. Take it off the heat and add your pure vanilla extract.
- Using a whisk, add your confectionary sugar (slowly) until the frosting is silky smooth and you reach the desired consistency.
- Pour the heated frosting over the cake and spread it evenly after it has cooled somewhat. If desired, top the frosting with chopped nuts.
- Before serving, allow the cake to cool fully. As it cools, the icing will harden.
