This is a delicious vinaigrette made with fresh strawberries, poppy seeds, and tangy white balsamic vinegar. Summer is a great time to indulge in all things fresh, especially salads, since the produce is at its finest. Fresh berries are my absolute favorite during the summer and strawberries start the season off on the right foot! This strawberry poppy seed vinaigrette makes use of two of favorite things: fresh strawberries and salads.

It only takes a few minutes to whip up this simple dressing. Strawberry poppy seed dressing is made by blending fresh strawberries with white balsamic vinegar, olive oil, minced garlic, local raw honey for sweetness, mustard for some tang, soy sauce for that umami factor, and sriracha for just a hint of spice. This dressing is delicious; if I could get away with drinking it, I would! Pair this dressing with a strawberry and avocado salad with bacon and feta, and you will send your taste buds into another world!

I make all of my dressings in wide-mouth mason jarsโ€”easy to store and easy to mix ingredients right in the jar.

Prep Time: 5 minutes Total time: 5 minutes.ย Servings: 2 cups

Ingredients:

  • 1 cup of fresh strawberries (roughly chopped)
  • 1/2 cup white balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1/4 cup raw local honey
  • 1 rounded tbsp Dijon mustard
  • 2 tsp. soy sauce
  • 1-2 tsp. Sriracha (to taste)
  • 2 large cloves of minced garlic
  • salt and pepper to taste
  • 2 tbsp. poppy seeds

Directions:

Add all your ingredients except your poppy seeds to a quart-size mason jar. Using an immersion blender, blend your dressing well (you could also use a blender or food processor). If you want, you can strain your dressing and then place it back in the mason jar. Lastly, add your poppy seeds and mix well. Pour over all your summer salads! Enjoy Friends! โค๏ธ
