Yes that is correct you can have cookies for breakfast….as long as they’re these cookies. These are currently my families favorite grab and go breakfast. Let me tell you, this is no ordinary cookie, they’re chocked full of carrot, apples, oats, and flaxseed.. you know all the good things your should be having for breakfast to give you fuel to start your day. They have a soft texture, full of whole grain goodness and free of refined sugars. Did I mention that they are super delicious and easy to make? Not to mention, these are fantastic for meal prepping as they store perfectly in the freezer.
If you are looking to make these gluten free, use oat flour and certified gluten free oats. If you prefer you can use maple syrup in place of your honey. Either way they remain refined sugar free. I love the warm spices of cinnamon, nutmeg and clove they add a ton of flavor to these carrot cake breakfast cookies.
I like to use my food processor to grate the carrots and then I go one step further and to a rough chop of the grated carrots with a knife. I chop my apple by hand but you could also send it through the good processor and grate it. I just like the chunks.

Don’t have any Oat flour? No worries my friend, you can make your own! It’s really very simple. Just take 1 cup of heaping oats, add it to your food processor and process until finely ground - around 1-2 minutes. You should get 1 cup of oat flour. See super easy!
Serves: 18-20 Cookies, prep time: 25 MINS, cook time: 15-18 MINS, total time: 40 MINS
Ingredients:
- 2 1/4 C Oats
- 1 C Oat flour, or whole wheat
- 1/2 C flaxseed - ground
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4-1/2 tsp ground clove
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1 C Applesauce - unsweetened
- 1/2 C honey (alternative pure maple syrup)
- 1 large egg
- 2 tsp pure Vanilla extract
- 4 Tbsp unsalted butter - melted
- 1 C finely grated carrot
- 1 C diced apple (or grated)
INSTRUCTIONS
- Set your oven to 350 degrees Fahrenheit. Grab your cookie sheets and lined with parchment paper. Set aside.
- Using a large bowl, take your oats, flour, ground flaxseed, spices (cinnamon, nutmeg, clove), baking soda and salt and stir to combine.
- Using a medium bowl take your melted butter (make sure it’s cooled off a bit), egg, applesauce, honey and vanilla and whisk together.
- Take your wet ingredients and add to your dry ingredients. Stir until combined.
- Fold in your diced apple and grated carrots.
- Using a scant 1/4 cup scoop out your mixture and drop onto your parchment paper. Using the back of the measuring cup slightly flatten your cookies.
- Bake until lightly golden and set in the middle approx 13-16 minutes. I would recommend that if you are using 2 cookie sheets then to rotate 1/2 way through.
- Once done, place cookies on wire rack to cook.
