(Highlands Ranch, Colo.) As more restaurants expand their menus to include plant-based items, DougCo is leading the way with more vegan-friendly options. The newly opened Total Vegan in Highlands Ranch joins Native Foods in Lone Tree to give vegan diners another option to explore.
In December, the Lamsal family opened Total Vegan Indian in Highlands Ranch at 9563 S. Unversity Blvd., and the restaurant already has dedicated regulars.
“It is honestly such a relief to have a restaurant that utilizes these amazing recipes to hopefully inspire others to be more open to eating plant-based,” customer Ryan Weisner said.
Weisner explained that he, among other community members, enjoys a vegan diet for a number of reasons, including health, reducing the impact animal agriculture has on the planet, and compassion toward animals.
The Lamsal family shares those beliefs and hopes sharing their background might help inspire more people to open up to new experiences.
“Being in the Indian food service industry for more than 15 years, we decided it was time to expand our creations toward the vegan community,” co-owner Utsab Lamsal said.
“Thank you for helping us prove that dishes can still be delicious without the use of animal products. Our ancestors started off as vegetarians anyway!”
The Total Vegan menu covers favorites like samosas, pakora, curries, and biryanis with other dietary restrictions and allergies in mind like gluten or nuts on their clearly marked menus.
Guests can order online or enjoy the restaurant in person from 11:30 a.m.-8:30 p.m., Wednesday through Monday.
