Chicken curry: Today, I'm sharing my South Indian special spicy chicken curry. The freshly roasted and ground whole spices give an extra aromatic flavor to this curry which makes you want to eat more and more for sure. You can serve this curry with any kind of bread or rice.

Step 1: Dry Roast the following ingredients on medium heat until you get a nice aroma.
- Dried red chili 4-5
- Cinnamon stick 2 pcs (small)
- Cloves 5-6
- Cardamom pods 4
- Mace 1
- Coriander seeds 3 tbsp.
- Shredded coconut 3/4 cup
- Roast 3 tsp. cumin seeds
- Fennel seeds 1½ tsp.
Grind them coarsely and set it aside.
Step 2: Pressure cook the following ingredients:
- Chicken 2 lbs.
- Oil 2 tsp.
- Turmeric powder 1 tsp.
- Ground black powder 2 tsp.
- Ginger & garlic paste or powder 2 tbsp.
- Water ½ cup
Add 2 tsp. oil at the bottom of the pressure cooker and place the chicken in. Add turmeric powder, ground black pepper, salt, ginger & garlic powder or paste. Cook on high until the pressure comes. Once the pressure comes, lock the pressure and cook for 3 minutes on high & 3 minutes on low. Once the pressure comes down open the pressure cooker and separate the chicken broth and set it aside.
Step 3: Fry the following ingredients:
- Sesame oil 2-3 tbsp.
- Sliced onion 2
- Curry leaves 3 stems
- Red Chilies 2-3
- Chopped tomatoes 3
- Salt to taste
- Turmeric powder ½ tsp.
- Ground masala
- Ginger & garlic paste or powder 1 tbsp.
In a huge sauce pan add 2-3 tbsp. of sesame oil over high heat. Into that add sliced onions & red chilies and fry till the onions turn brown. Into that add curry leaves, chopped tomatoes, turmeric powder, ginger & garlic paste or powder and salt to taste and fry for 3 minutes over medium heat. Now add ground masala (from step 1) and cook on medium low until it releases oil. Pour the chicken broth (from step 2) and bring it to a boil. Now add the cooked chicken & let it boil for 6 minutes over medium heat. Finally garnish it with some chopped cilantro and squeeze some lemon Juice.
