Coconut Milk Rice: Coconut Milk rice is quite popular in the Southern part of India & it’s made in many ways. A fragrant, tasty and mild coconut milk pulao made with basmati rice, coconut milk, spices and herbs. It goes well with chicken or mutton(goat) curry or vegetable korma. - Step by step instructions:
1. Take a cup of basmati rice, wash a couple of times & soak it for an hour.
2. Add 3 tsp. ghee and 2 tbsp. oil in a pan over medium heat. Skip the ghee if you are a vegan.
3. Spices:-
- Green chilies 1-2
- Cinnamon sticks 2
- Cardamom pods 2
- Cloves 3-4
- Kapok buds 1
- Bay leaves 2
- Fennel seeds
- Cashews
- Raisins
- Fennel seeds
4. Once the oil is hot, add green chilies, bay leaves, cashews, raisins, cinnamon sticks, cardamom pods, cloves, fennel seeds, and kapok buds and fry for 2 minutes on medium heat.
5. Add 1 sliced onion and fry till they turn brown. Add 1 tsp. of ginger garlic paste and fry for a minute or two.
6. Add 2 cups of fresh coconut milk, salt and bring it to a boil. (you may use canned coconut milk if you want, but dilute it.)
7. Add soaked rice and cook on medium until the water evaporates.
8. Add ½ chopped tomato. Do not add more, it changes the color.
9. Cover & cook on low for 10 minutes.
11. Serve with chicken curry, mutton curry or veggie korma.

- Coconut milk 2 cups
- Sliced onion 1
- Cut tomato ½
- Ginger garlic paste 1 tsp.
- Ghee 3 tbsp.
- Oil 2 tbsp.
- Chopped cilantro 2 tbsp. for garnishing
