Whether you love or hate Spam, there is no denying that it’s a versatile food item that you can do a lot with. You can make it into a simple sandwich or even melt it with your favorite cheese like I did and make a Spam and cheese sandwich. I've heard the saying "don't knock it until you've fried it" so that's what I did. It's been around for as long as I can remember but this will be my first time EVER eating Spam. Smoking spare ribs this way I never imagined they would turn out so good! I used a BBQ sauce that's been around since the 1980's, as I remember, and it's called Open Pit from  @ConagraBrands  Open Pit BBQ Sauce was introduced in Detroit in 1953 as a "Classic tangy BBQ sauce to liven up family meals". This BBQ sauce is only found in the Midwest to my knowledge and I think  @ConagraBrands  should distribute it throughout the country *hint* *hint* I smoked these ribs for 3 hours at 225-250 to get that flavorful smoke taste and then I change the cooking method from what I usually do. I decided to try a 2 step cooking process I came up with and these ribs turned out juicy and fall off the bone delicious! Cooking these spare ribs with this unique method and using the Open Pit BBQ Sauce flavor that I remember from my "younger" days was a great idea!

Every Sunday, no matter the weather, Janet's Kitchen puts a lot of time and effort to make sure the homeless get a good meal at least once a week. This particular week I was asked to make some smoked barbecue pulled pork and I was more than happy to help. Dan bought the pork loin (25 lbs) and the buns and I spent the 9 hours cooking and shredding it. The next day the barbecue sauce was added, the shredded pork was heated up and Dan and I took it downtown. Helping people in need is a very humbling experience. A huge thank you goes out to Brian Loma, Janet's Kitchen and the many volunteers that take time out of their weekend to be downtown week after week to feed the people that need it most.

The number one reason I love dark meat over white meat is the dark meat is more juicy than the white meat. Although white meat will probably never take over my love of dark meat I've found that I've been cooking it wrong and I have found a new appreciation for chicken breast (white meat). Who doesn't want juicy chicken breast. Dry meat is boring so why not make chicken breast, or any white meat the way it was meant to be eaten -  JUICY! Not everybody loves dark meat. I have to say that I have found the proper way to cook white meat so that it can be as juicy as dark meat. It can be done if you just know how to cook it. In this video I will show you how to cook chicken breast into a juicy piece of cooked meat - hot and fast is the key to it all.
