Sushi and summer go hand-in-hand. Although not located on the coastline, Lancaster has a fair selection of places where you can get sushi. Here are three of them, all of which I've been pleasantly surprised with.
Whole Foods at Belmont
As a Norwegian native, the quality of the salmon used in sushi is an important factor for me. Whole Foods at The Shoppes of Belmont is the place in Lancaster where I've had the best salmon. The sushi from Whole Foods Lancaster is made by Genji, a company which started as a popular Japanese restaurant in Philadelphia, named after the title character in “The Tale of Genji,” the first Japanese novel ever written.
Their to-go meals are fresh and full of taste. Each Thursday they offer 20% off all vegetable rolls for Prime members. It's not a significant discount, but I'll take anything these days.

Yuzu Asian Cuisine
Yuzu Asian Cuisine are creative when it comes to their meals.
The bento-box is a local favorite, and so is their Green Phoenix with spicy tuna. Another appetizer, Beef Negimaki is a traditional Japanese dish consisting of thinly pounded meat (often medium/rare) that's marinated in teriyaki sauce, wrapped around scallions and grilled. Maki means roll, and perhaps not very odd that this dish looks like a sushi roll. It tastes outstanding.

Mojo Asian Cuisine & Sushi Bar
Mojo Asian Cuisine & Sushi Bar is located in Lititz, the northern part of Lancaster County. This restaurant has a large selection of sushi, from regular salmon rolls to sashimi and donburi - which is broiled eel on rice. The meals are reasonably priced and the staff is worth mentioning here. You're always greeted with a friendly smile and you never have to wait too long for your food.
I've both dined in and ordered takeout from Mojo's. The dining area is a nicer, casual restaurant and definitely worth trying out.
