Busy days call for easy food recipes. This meal is not fancy whatsoever, but it's quick to make and works great as a lunch whether you're working from home or you are commuting to an office.
It's no more than a humble 3-ingredient salad, but it is both filling and tasty.
For this recipe, enough for 4 people, I used the following ingredients:
- 1 rotisserie chicken
- 2 mangoes
- 1 large broccoli
Add salt, pepper, or olive oil if you prefer.
I purchased a lemon-pepper marinaded rotisserie chicken, so I didn't feel the need to use any additional spices.
Steam and rinse
First, cut the broccoli into pieces. I prefer large pieces, but feel free to customize it to how you best like it. Then, steam the broccoli for no more than 5 minutes. I usually rinse them off after 3 minutes, to avoid that mushy consistency.
Let the broccoli cool down while you cut two mangoes into cubes.
Place both the mango and broccoli in a bowl, and then you can start to pull the meat apart from the chicken. Mix it all together carefully, and enjoy!
If you're not sharing the meal with anyone, this salad works great as a packed lunch that can last for a couple of days. You can also add sides to this healthy, filling salad. If you make some brown rice or pasta on the side, it is a full dinner before you know it. Baked potatoes would also work as a good side dish to this delicious, light meal.
