Del Rossi's Cheesesteak & Pizza Co., located at 538 N. 4th Street in Northern Liberties, has revamped its pizza menu, adding artisanal creations to its line-up with the help of Consulting Chef Gregorio Fierro, a renowned pizzaiolo and sought-after pizza consultant.
Del Rossi's owner Nish Patel had completely refreshed and renovated the pizza and cheesesteak joint that he acquired literally days before the pandemic lockdowns began last year.
Patel, who also owns other food operations in the city, facing challenges from increased prices of goods and labor as the rest of the industry, chose a bold path fighting the impulse to retreat.
"The food business is really a challenge these days with rising food and labor costs, and shortages," says Patel. "Knowing what we had here at Del Rossi's, my choice was to resist the pressure to do cutbacks and step up a level with better quality ingredients and a new angle on our great traditional pizza business."
When he brought in celebrated Chef Gregorio Fierro to confer, he thought he would just be getting some great recipe ideas. But in fact, the master pizza chef has overhauled the entire pizza operation. Starting with the dough that Del Rossi's uses for all its pizzas, he completely changed the flavor profiles and efficiency of the massive pizza volume coming out of the shop.
"Chef Gregario taught us some amazing traditional pizza dough techniques giving us a great base flavor and crunch for the new artisanal pizzas and making the production of all our pizzas far more efficient," explains Nish while declining to disclose the secrets of the old school Pizzaiolo, except to say "Aged dough ... maybe?"
The restaurant invested in a dough mixer and a pizza oven, imported from Italy, ensuring consistent temperature and perfect results for a constant flow of hundreds of pizzas.
Among the new Artisanal Pizza available now are:
- Spicy Salami: Salami, Long Hots, and Mike’s Hot Honey
- Long Hot Special: Italian Sausage, Long Hots, Red Onions, Crushed Garlic, topped with Mike’s Hot Honey
- The Houdini: Provolone Cheese on Bottom, Plum Tomato Sauce, and 18 months aged hand-grated parmesan on top.
In addition to the pizza menu upgrades, the entire Del Rossi's ordering and cashier area, dining room, and kitchen have received a modern facelift.
