(Avon, Colo.) Internationally acclaimed Chef Richard Sandoval is opening a new restaurant at The Westin Riverfront Resort & Spa in Avon.

Stoke & Rye, a modern American grill, serves approachable yet elevated cuisine. The menu reflects the Colorado landscape while embracing Sandoval’s creative stylings, giving locals and travelers classic cuisine with a fresh flavor.

The menu features grilled steaks, hand-cut chops, shucked oysters and seafood towers, rack of lamb with an herb crust and house-smoked Colorado trout. The menu also includes fresh salads and shareable plates such as the Mountain Trout Crudo with creme fraiche, chives, trout caviar, lemon and sourdough breadcrumbs and Raclette served tableside with cured meats, roasted potatoes and grilled focaccia.

The restaurant pairs its cuisine with a beverage program ensuring guests can enjoy wines from around the world and cocktails with local flavors and ingredients. It also serves more than 160 whiskeys and two Signature Whiskey Flights, including a Colorado Rye Flight featuring pours from 10th Mountain Whiskey, Deerhammer Distillery, Laws Whiskey House and Woody Creek Distillers.

Stoke & Rye will start serving breakfast and dinner daily on June 9.

Sandoval is a Mexican-born chef, restaurateur, TV personality and philanthropist whose Richard Sandoval Hospitality group operates more than 60 restaurant concepts around the globe, including in 10 U.S. states and the District of Columbia.
