Make a delicious pot roast with only five ingredients.

A good pot roast for Sunday dinner or even a weeknight meal is always a treat. This recipe can be made in the oven or in a slow cooker.


  • Beef or pork roast, 3-4 lbs.
  • Powdered Ranch Dressing mix or a seasoning blend of choice
  • 1 thinly sliced onion
  • 2 Tablespoons pickled jalapeno or other chili pepper + brine
  • 1 stick of butter


Preheat oven to 375º F/190º C.

Place pot roast in a roasting pan or slow cooker. Sprinkle with ranch dressing mix and/or any desired dry seasonings. Top with sliced onion, peppers in their brine, and the entire stick of butter. If you want additional ingredients like carrots or potatoes, put them in as well, now. Cover the pot and put it in the oven or turn the slow cooker on.

If using an oven, let cook for 2 hours. Allow the meat to rest for 15 minutes before slicing.

If using a slow cooker, let the roast cook for 6 to 8 hours on low, or 4 to 6 hours on high. This recipe can be prepared before bed and allowed to go overnight on low. You will wake to a delicious smell and a tender entree.

Slice pot roast against the grain or tear it apart with two forks and serve with gravy over mashed potatoes or rice. Makes the best roast beef sandwiches. Pork can be blended with any type of barbecue sauce to make pulled pork sandwiches.
