Celebrating birthdays and events in the last year and a half, in the midst of a pandemic have been hard enough as it is. With everyone in the household putting on quarantine weight, we wanted a birthday cake that was delicious and guilt-free. I took it upon myself to hunt down the best cake and Raw Baby delivered!
Raw Baby sells the types of cakes you probably wouldn't even be able to get your hands on at Whole Foods. No, you have to go to Erewhon for a cake like this. Erewhon and Mother's Market both carry Raw Baby in their stores, but you can always place an order with the business directly. These are desserts that are worth going out of your way for, because you will not find cakes like this at your typical bakery. These cakes have nothing but 100% raw, vegan ingredients. Raw Baby's cheesecakes are made with cashews, coconut milk, coconut butter, unrefined sugar, etc.
Arlena, the owner of Raw Baby, started the business in 2017 with the goal of changing desserts for the better. She hand makes every cake to order--nothing in her kitchen is ever pre-made--so advance notice for a cake is needed. 24 hours advance is the minimum, but several extra days should guarantee the cake you'll want is available. Some of her best-selling cakes include the "Nut"Tella Cake, Blueberry Lemon Cheesecake, and Blue Mango Cake, but there are always some seasonal flavors that shouldn't be skipped over.
Raw Baby cakes range from $65 - $75 for a 6 inch cake and $125 for an 8 inch. You can also get add-ons like cake-toppers for $5 and fresh florals for $15.
The cakes are pricier than usual, but in our case very worth it. For the health benefits and because this particular cake recipient has long labeled me a bad influence! I'm always bringing home pastries, doughnuts, trashy junk food and fried chicken when the birthday boy tries to eat with ghee and vegan cream cheese. This cake was the exact perfect cake for him, or the health nut in your life.
While I will always be a cream cheese-cheesecake gal (mmm, Japanese cheesecake), I can still appreciate a cheesecake made almost completely of cashews. There wasn't very much lemon flavor in the Blueberry Lemon Cheesecake we ordered, but it tasted similar to blueberry yogurt. The crust was made completely of nuts and it was delicious, almost better than a graham cracker crust! It added a very nice textural component to an otherwise smooth and creamy cake.
While we were worried 6 inches would be too small, it was perfect for four people and we had a couple slices left over! Everyone was in disbelief that there wasn't any actual cheese in the cake. They all loved the cake, and guess what? I'm no longer a bad influence.
