This is it:

@mollyjwilk Springerle cookies have become a Christmas cookie tradition of mine the last couple of years. If you do them right, the taste is like a a macaron and a sugar cookie all in one 😄 #christmasbakes #christmascookies #springerle #springerlecookies ♬ Holly Jolly Christmas - Michael Bublé

What are the trending Christmas cookies?

They're called springerle cookies.

Have you heard of them?

The creator says:

..the taste is like macaron and a sugar cookie all in one

These rectangle-shaped sugar cookies have an embossed Christmas tree emblem atop that looks like it's stamped on. The stiff-looking cookies are perfect-looking but in the video the creator breaks one in half straight out of the oven. It looks like a fluffy, soft cookie with a texture that looked similar to cake, in the video.

Commenters are saying...

"I love how we're all collectively discovering springerle cookies"

"Did we all just discover these at the same time"

"Well now I need a springerle"

In this video, the creator goes into more detail about the cookies covering fresh vs. aged cookies and what you can expect from both.

For more on how these cookies are made and baked, here are some examples from Twitter:
