Frank's Diner is the best place in town to get the best benedicts. The Spicy Creole Benedict is a must and they also serve amazing omelets. My favorite one is the florentine, with spinach, tomato, mushrooms, avocado topped with pesto hollandaise, your taste buds will be in heaven. Also, the service is always very helpful and welcoming. When you're in Spokane, this place is worth visiting and also has an interesting history.
